  • This recipe features a roasted lamb leg on tripod over an outside fire pit. A fire pit can be easily constructed ideally about 1 - 2 feet deep with earth or sides to keep in the heat. Build a large fire of hardwood and charcoal. The smoke from fruit wood such as apple or cherry will add additional flavor. Continue feeding for about 3 hours or so before cooking so that you develop a deep bed of hot, glowing embers. The leg should be basted about every 15 minutes throughout the cooking process. The surface should not be allowed to burn while developing a consistently dark, rich glaze. Alternatively, the lamb leg can be slowly roasted in the oven.

Was 122 F your finishing temp? Seems pretty low, the lamb appeared too rare for me.

depends what area you are referring to. The lamb chops area i try to keep it lower so they are mid rare 120ish so they will carry over to 130ish and legs you cook until they are tender along with shoulders and those were around 180 F and up.
