  • Dumplings are truly irresistible, especially when you can stuff them with generous fillings made at home. They taste even better than store-bought ones! 🥟🍳 Today, I'm making cabbage and pork dumplings, along with Japanese pan-fried dumplings, spicy dumplings, and duck breast stir-fried with udon noodles.     🍳🥟Recipe note
    ▹ Dumpling Filling Recipe 🥟 (Makes approximately 80 dumplings)
    Minced pork - 750g
    Cabbage - Half
    Onion - Half
    Minced Ginger - A little
    Seasoning - Soy Sauce (light), Soy Sauce (dark), Mirin, Sesame Oil, Duck Fat
    1. Mix cabbage and onion with salt, let it sit for an hour to release water, then rinse off the salt and squeeze out excess water.
    2. Knead the minced pork by hand for at least 5 minutes, adding a little water.
    3.Mix all seasoning ingredients, then add cabbage, onion, and minced ginger.
    ▹ Spicy Dumpling Sauce Recipe
    Mix together Mala (numbing) sauce, soy sauce (light), mirin, sesame oil, and a little hot water.
    ▹ Duck Breast Stir-Fried Udon Recipe
    1. Stir-fry chopped green onions and garlic, then add diced celery. Set aside.
    2. Pan-fry duck breast until cooked through, then add the stir-fried vegetables.
    3. Add soy sauce, mirin, and cooking wine.
    4. Add pre-cooked (and cooled) udon noodles, then a little 5. sweet soy sauce (dark) and Japanese barbecue sauce.
    6. Finally, turn off the heat and stir in the chopped green onions to finish.
