      There’s a multiple award winning fishery by me called Calumet Fisheries and they leave the skin on too. They just sell whole fish or steaks, was surprised to see this guy turn it into what he did. Felt like he ruined it.

    That's a rub, not a brine. A brine is liquid that the meat is soaked in, a rub is a dry mixture sprinkled.on the outside of the meat. They act differently on the meat and give different flavor profiles and texture.

    Skinning, filleting and cutting out the outer part of the midline can really help reduce the less desirable flavors in trout. It's the only way I'll eat it now.

      Thats got to be the water. I am fortunate enough to have inherited a Cabin adjacent to Federal wilderness in eastern WA state and there is an alpine lake full of trout. I just gut them and fry or smoke them and they are as good as salmon imo. Just gut them and take the heads off like this guy.

    So in other words, you really don’t like trout that much lol. That was 1/2 cream cheese and 1/2 trout. Not saying it wouldn’t taste good. But you may as well just put chives/green onions into cream cheese at that point lol.

      That's the best way I've had it... put flour, salt, pepper in a plastic bag, and shake the trout in the bag. Fried in BUTTER!!! Amazing.

    We steak up larger browns from Lake Michigan and smoke them very similarly. We do a wet brine with salt & brown sugar plus a little soy sauce, and smoke on my offset smoker for a couple hours on the tail end of a longer cook for beef or pork usually.

    Fish skin is awesome I don't know why people take it off just like I don't understand people trimming steak I'm sure your fish salad was good but if you're baking fish with the skin on you should have just brought a couple fillets for a couple close workers you really respect and maybe for another day bring normal fish salad for all the workers

    I put flour, salt and pepper in a large zip loc shake the trout skin on and pan fry crispy golden brown. The skin is crunch and amazing. Usually lakeside while still fishing.

    Man I love all kinds of fish but smoked trout or smoked salmon is my favorite. I think its ok to smoke or cook with the skin on.
    At a teppanyaki restaurant I worked at we de skinned but the head chef would crisp the skin.
    He was the only one who like the skin crisps until I came along.
    My buddy over smoked some Salmon and was going to throw it out.
    Until i tried some.
    It was like a chewy salmon jerky. I took everything he was going to throw out.

    If you like you smoked trout a little more dry, soak it in spiced rum for an hour after washing off the brine. Old fella from the west coast showed me and damn is it good.

    When smoking trout , salmon, mullet, etc, surface area is the thing. I butterfly my fish or a very least, I split them down the middle to the tail, but always, I have the body cavity complete exposed.. still, your dip looks good.

    People make the same dip with king mackerel because it’s an oily fish, generally big and it’s catch usually results in death. Full of mercury as well!

    I’ve cooked trout for so long I have a trick I do, once it’s cooked you can find the spin and peel it and all the meat comes off and all the ribs stay on the spine works every time.

    That's not a brine, that's a rub. And that's not smoked trout, it's baked on a grill trout. And going with the theme it's probably safe to assume you went fishing in a lake recently stocked with farm raised trout, which is inedible trout. Although, apparently if you add 20 ingredients with strong, contrasting flavors and put it on some skunky pumpernickel you can traumatize your taste buds enough so that you can't even tell you're eating GMO fish that was raised on antibiotic fortified catfood in a 10ft diameter concrete tub.

    That isn't a brine it's a rub. A brine is a liquid and the fish need to be submerged in it for 12-36 hours for the flavor to soak in. If you use an actual smoker the pressure of the smoke will actually permeate the skin of the fish and allow the smoke to fill the cavity as well. For a brine salt, brown sugar, mollases, and water is the recipie.

    Try marinating in teriyaki sauce salt brown sugar liquid smoke and garlic powder smoke in an electric smoker with mesquite wood slow for about 4 hours

    Honestly I think smoking on a round small Weber type like that is harder than a barrel smoker or something bigger. Way easier to overheat or lose the heat imo. Impressive. And man smoked fish/crab/etc dip is so dang good. Also where are you from to call that a brine? I would call that a rub. A brine is liquid with salt/vinegar and other seasonings to me.

    Best fish there is to eat and the skin is the best part! Nice and crispy it’s so good! I’ve never had trout like that but I bet it’s amazing! Looked great! Nice piece of toast! Yum

    Awesome that your coworkers eat fish. I live in Florida and the amount of native Floridians who don't eat fish is insane. Like you're mostly surrounded by the ocean with tasty fish but you don't like it? Whatever. More for me i guess.

    The best way to prepare trout:
    Get a hickory plank and soak it in bourbon overnight.
    Clean and brine the trout.
    Use fresh pine bows to wrap the trout to the board.
    Cold smoke the combination of trout with pine and hickory for seven hours.
    Throw away the trout and eat the board.

    Sounds good! Tip for smoking trout (or any fish) book them. It's when you cut them all the way to the spine and open them like a book. Smoke skin down for a light smoke flavour and meat down for a heavier smoke flavour

    Should have crisped the fish skin in a little bit of oil in a hot pan first. Fish is pretty delicious like steak gristle(obviously descale it first).

    Apparently, most of the commentators here have never eaten smoked trout salad, I can't speak for this recipy, but I make it with bell peppers and pickles, then eat it on fresh black bread, it tastes amazing. You still taste the trout and smoke and it's one of my favorite things to do with a trout.

    I had an argument with a friend of mine who said sweet & salty is disgusting and people who like the combo are too.
    I worked at a restaurant and attended several molecular gastronomy courses as well, yet the m8 still insisted that sweet & salty combos are disgusting after I told him that ain't true.
    How tf can I change someones mind on such a manner?
    I get that everyone has different tastes, but with that knowledge should come understanding, but not in his case apparently :/
