one of my fav dishes i make when i am missing home... never seen it with cinnamon before tho, interesting... usually in greece we only use cinnamon for meat dishes... at least where i am from. if u want to make it even more authentic, use the leaves of the cellery as well and always use a bit less oil while cooking, and add a lot of fresh olive oil on top, that way u get all the health benefits of the oil and it tastes a lot better! and make the oven hotter or leave em in longer, those beans need some color!

To my hot olive oil I add cumin seeds to all those veggies but I add good Badia brand adobo powder seasonings and chopped colorful peppers and fresh fine pressed garlic and chopped cilantro and cilantro and chopped big leaf and small leaf oregano and recao/culantro. Then add chopped red tomatoes and kosher salt to taste
What do you need to do to use dried beans? I know to soak them overnight. Do I also cook them prior to adding them to the tomato mixture? What should I cook them in? Broth? Water? A lot of water like a soup or a little water like a stew?
Yes, you have to cook them first. After soaking, tip out the water and rinse the beans well. Boil the beans in three times the amount of water for 60-90 minutes. Lightly salt the water and add a few bay leaves, garlic cloves, the zest of a lemon and a dash of olive oil.
