Hi Chef Timmy James, Very informative.We like to serve roasted potatoes, and par-boiling them makes so much sense. It makes the roasting time so much shorter, and eliminates over cooking them and having them dry out. Will try this as soon as possible. Thanks to Matt for very well done videoing. Thank you CTJ for showing us how to make your roasted potatoes. I will definitely try your recipe! I like rosemary too but I hardly buy them. If you have anymore recipes with rosemary, please share it. What a gorgeous kitchen!!
Hi Diva. I do prefer fresh over dried especially rosemary on potatoes. However I do always have dried on hand because you can’t always find fresh in perfect condition and sometimes you can’t get fresh as quickly as you would want to in order to cook something. If a recipe calls for 1 tsp of fresh rosemary, you should use 1/3 less of dried rosemary. So you would use 1/3 tsp. It goes for most dried herbs
