  • This is the easiest way to clean your whetstones. Using Sabitoru Rust Erasers to clean whetstones has changed my life. The Naniwa dressing stone is the next best thing but wears too quickly for my taste. The rust eraser will save you time and money, and I have still used one that is 4-5 years old.

    I bought those rust erasers at your suggestion a good while ago. They do the trick very easily and my whetstone felt so slick and more effective afterwards. They're cheap too; really great.

    I got that rust eraser and tried to clean an 8000 soaking stone with it. It didn't remove any of the dirt, but it did wreck the surface of the stone, which now feels a lot rougher than before. So that's something.

    Hi Ryky, many thanks for another great tip. I just used these on my new Veneve Dragon Diamond whetstones, and it worked great without sacrificing too much "stone" as with the Nagura's which very quickly turned the colour of what ever stone I was cleaning by wearing down the stone, not just removing metal, thanks again.

    Here's one thing people should understand about naguras...they aren't great for cleaning up an already loaded stone, although they will work. Their biggest function is raising a slurry BEFORE sharpening so that significant loading doesn't take place to begin with. Especially with higher grit finishing stones they'll also act to increase the feedback and improve the overall feel of the stone. Some stones really feel much better when they're hit with a nagura first, I'm thinking stones like the Kitayama 8k, Arashiyama 6k, the fine grit Shapton Pro/Ha No Kuromaku stones (even though Shapton will tell you NOT to use them 🤷‍♂️) etc. The fact is a rust eraser simply can't do everything a good nagura can do. For strictly cleaning loading, sure they work fine. And not all naguras are soft. Naniwa makes a line of them now (although they are pricey like all things Naniwa) that are actually very hard and will last a very long time. Certainly far, far more than the blanket "20 times" stated in this video. They are hard hard, like Shapton Pro hard. My point is don't forget about naguras and just buy a rust eraser after watching this, you'll miss out on some of their primary functions and and intended uses. Their use is more complex than cleaning an already loaded up stone

    Hi, you know something that I tried recently to clean a stone was some 600 grit sandpaper. I was refinishing a blade and had an assortment of wet/dry sandpaper and I just gave it a shot. I made sure that the surface of the stone was nice and wet and just used light pressure. It worked very well and I also used it to round off the edges a little. I am not sure if there are any negative side effects to this such as grit contamination but the sandpaper grit certainly does not become embedded in the stone. It is very inexpensive of course and simple and quick.. (I am not suggesting I thought of this, I just haven't seen this method used to clean the surface of a water stone before). I have been doing it now for a few months and I have used various grits from 600-1,000. Give it a shot :)

    • @seanb6986
      @seanb6986 6 років тому

      I find that 2000 grit sandpaper does the job even better; it cleans the surface nicely, and flattens waterstones slowly so that you can use the sandpaper with every use without any problems.

    if you arent a professional chef, japanese chef, or need your knife to be insanely sharp and super precise, just get a cheap nagura stone. nagura stones basically has 2 primary functions, clean and correct. the most important function of a nagura stone is to correct the shape of the whetstone; from convex shape back to its original flatten shape. after long usage a whetstone surface can become inconsistent (no longer flat/convex shape) and this can become a problem when sharpening knives especially on lower grit stones whereby a slight error in the angle can cause your edge to be damaged or the stone to be damaged. the other function is to clean; remove metal shavings from previous sharpening, accumulated dirt and whatever thats making it dirty. the only thing you probably need to take note is to not use a lower grit nagura stone on a higher grit whetstone. e.g. for 3000g whetstone, use a 3000g nagura or higher but not too high. you dont want to use a 3000g nagura on a 800g whetstone either, you will just destroy the nagura stone before you can even clean out or flatten the 800g whetstone.

      Whetstone flattening and maintenance, a video by him about flattening. The rust erasers shouldn’t change the grit. The very top surface may get a little changed, especially if you use one that is really coarse. But, after a few passes it should be back to normal for the most part. If not, fine sandpaper, a nagura, or something similar will bring it back.

      Yup. Good approach. Eventually you Will have gained most of the academic knowledge. At that point you need serious sharpening experience. I started becoming quite confident and very effective after 200 - 300. Don’t worry you won’t wreck your knives. But eventually you’ll be able to get them razor sharp without thinking about it. Eventually you’ll learn your own tricks that even UA-cam won’t tell you about. Even after 400 sharpenings, I recently had my wire- burr edge after sharpening on a fine 3000 grit come off the blade just like a fine long hair. Lol. I’ve yet to see that on UA-cam, by anyone. So give yourself some time and after a couple years he will be very good. I’m thoroughly convinced anyone can be as good as Japanese if you apply yourself and our OCD enough.

    Haha. And I thought I was the only one using the Sabitori rust eraser. But it's the rubbery version, that won't wear the stone as much and will put a fine surface. I do have this medium coarse duo as well for about 2-3 years now, but I like that one more. It's almost new after all these years.
    Worse dressing stone for me could be that Naniwa chunk from Chosera packs. Not what I would expect from top notch series (they could learn something from Suehiro here). I couldn't use it on anything from #400 to #12000. Just didn't like it at all as it was. I think it works better if the surface of the nagura itself is prepared on a coarse diamond stone from time to time. I did try this and it made a visible difference.

I stopped sharpening knives 10 years ago, and now I see it was my technique wrong, so I'm copying yours :) question, do you have like a starting kit recommendation? I have and old 2 sided shun stone, 300 and 1000 both sides are uneven, I want to make some investment know, getting a couple of nice stones, what are recommended, I love Muela knives and I have normal kitchen knives, all the best for '18!

    Hello, Some Vendors state that the Rust Erasers should Soak for 10 minutes.
    Some Stones Need a small water jet to be clean.
    Thank You.

    Great channel Ryky. I have the entire Dalstrong Shogun line, I handed down my Classic
    Wusthof set I have had for over 30 yrs to my son. I love the support that Dalstrong provides, it is second to none.
    I also have one of the Omega limited and so does my son.
    I have learned so much from your videos and they are very appreciated. Are you still doing the card lottery? if so :-) J425

    Why do you wash away the nagura slurry before sharpening and wash away stone slurry when sharpening? Isnt the point to keep the slurry on the stone...? And the point of the nagura stone to clean the surface and create slurry before actually sharpening to speed up the sharpening process, especially for higher grits?

    Thanks for the tip! If I understood your point, you're saying that rust erasers work well for cleaning the whetstones? But we would still need a nagura for flattening them, right? (Sorry for the n00b question.)

    Thanks as always for the valuable content! Quick question:
    For my first stone for mainly sharpening a kogatana knife, survival knives and wood working chisels, should I get a King KDS 1000/6000 or just get Cerax 1000 and buy a separate 6,000 later on when I have the money?
    Thanks!

      @Burrfection  6 років тому +2

      go cerax 1k, and get polishing stone later one. always invest in good 1000 stone first.

    Should my Whetstone be getting so dirty that I need to clean them after every knife I sharpen? The last time I sharpened my knives my Whetstones got a ton of metal embedded in the surface. An I don't something wrong or is that expected?

    What do you mean by cleaning whetstone, does it simply mean to flatten it or does it have a different meaning behind it?
    Can we use any cheap (no brand) flattening stone instead of using the rust eraser or quality flattening stone?

    • @Burrfection
      @Burrfection  10 місяців тому

      cleaning is simply removing load up on the stone. you can flatten, but that takes off a bit more materials, and costs a lot more money to get a flattening stone, than just a stone cleaner. i use the atoma 140 for flattening, but it's pricey burrfectionstore.com/collections/accessories/products/atoma-diamond-sharpener

    Outstanding video. I am slightly unclear on one issue, can I use a 6,000 grit dressing stone to properly clean the same grit sharpening stone? I do use the rust eraser too. It is amazing!

    Ryky - the cleaning stone that came with my Kramer by Zwilling sharpening kit actually jagged the corners of my 5000 grit stone. It's like the cleaning stone chipped the corners off. Maybe I got the cleaning stone center too far off the stone and it caused it to chip. Should this happen? Maybe the cleaning stone moved too far off the main base of the sharpening stone and didn't stay level. It was disappointing.
    I can see when you start using the cleaning stone in the video about the 35.30 mark, you aren't using the cleaning stone really off the boundary of the sharpening stone too much. You appear to barely having it overlap over the edge of the sharpening stone at all. Maybe I was getting too far off the stone.

    I aggree the Shapton Pro 120 is fast cutting but faster wearing than the rest of the Shapton's. I like it too, but is there a faster-cutting super coarse stone--perhaps the Atoma 140 or DMT coarse Diasharp? For cleaning whetstones, rust erasers are better than Nagura's and cheap coarse dressing stones. When you say the latter will "destroy" your whetstones, you mean only that they will abrade them, not damage them--right?

    when to clean with eraser, when to clean and flatten with plate (ex Atoma 140)?

  • @AESamuel

    Those rust erasers cleaned my shapton pro 8k well but left a rougher looking texture than my atoma plate which leaves it "glassy" looking. Could this affect the finish and/or speed of sharpening? Iirc the shapton website says the stone should have a "mirror like" finish.

    Let me ask you: doesn't my almost $400.00 dollars Sharpton diamond Lapping stone clean my stones as they flatten them? Do I really need these erasers as well? What's the benefit in using these as opposed to just the lapping stone???

    • @Burrfection
      @Burrfection  6 років тому +5

      your shapton plate should be used for flattening, not cleaning. so, yes, you CAN use it for cleaning, but it simply takes off too much material for daily use for cleaning.

    • @skateboardist1686

      he sharpened a freakin butter knife man, this guy does not know what he is talking about. Multiple engeneers developed those 300$ lapping plates you have and I'm soon going to have one myself. i just got the dmt 95 and have a granite slab thats Flat to 2.5 microns. He claims you do not have to have that accuracy because of some reason he half explained. he knows more about making videos than flattening stones. he has to have a reason for use to watch. There are so many videos about diamond lapping and using sand paper that he has to say they don't work so watch my videos. Yes the nagera stones work and smooth your stone out the erasers do good as well. You always get what you pay for especially when it comes to tools. men don't play around when it comes to tools. these are not cell phones or ikea furniture. we are talking about something you shave with on the skin of your face. you can sharpen your razor with an 4000 norton water thats been used to sharpen 3 different blades and not even strop it and still it will cut beard hair. It just won't cut like a a razor should if you don't use a flat surface. those lapping plates are awesome and you will tell a difference between a 20$ tool and a n almost 400. going with the very expensive shapton glass stones are much better than any stone around and its not preference its performance. if this dude prefers to have to struggle through a shave then thats his preference.
