If you look close you'll notice the crab's arm detaches well after the punch, while the crab is scooting away. That's a sacrificial maneuver - drop the limb so the predator will go for it instead of the creature. It's called autotomization. "The spontaneous casting off of a limb or other body part, such as the tail of certain lizards or the claw of a lobster, especially when the organism is injured or under attack."

Oddly enough that happens in one of Fred Saberhagen's Beserker short stories, though I cannot recall the title. The series of short stories and novels is about future interstellar human civilization defending itself against an invasion of thousands of AI controlled ships and on a mission to destroy all life, the titular "Beserkers".
In this story a small team of terraformers are the only humans on a mostly oceanic planet. A Berserker enters orbit and decides to release an army of small crablike robots in the nearby bay to take the humans by surprise and then kill the rest of the life afterwards. This planet didn't have much in the way of multicellular organisms so they were creating an ecosystem with transplanted species, including mantis shrimp.
SPOILER ALERT!
The mantis shrimp present in the coastal waters around the human base managed to destroy the robots (which they mistook for real crabs) with relatively few loses. :)
