Kenma very vocally enjoys how Hinata plays and likes watching him, his up beat, cheery and optimistic nature uplifts Kenma and so him telling Hinata to stay interesting is basically Kenma threatening to completely crush that optimistic mindset and Playstyle.
So the reason Hinata reacted that way to Kenma saying “stay interesting” is because while you interpreted it as something like a friendly exchange. Hinata was more intimidated by it, cause Kenma’s never spoken to him that way before. In a real competitive “don’t make this boring for me” kind of way.
Similar to Shoyo staggering back a few steps when Wakatoshi was intently staring towards the last leg of their match as he (Wakatoshi) mentally said, "I have never once doubted in our ability to win, but I am absolutely sure, now more than ever, _I want to crush you_ ."
12:18 Kuro's comment of praise for Hinata was because he was impressed with Kenma's interest in Hinata playing that it lead to him to reading and countering a synchronized attack because they were playing like an agressive Hinata. Basically he want's Hinata to be in good health so he can see a driven Kenma do more amazing things. I would have thought Kenma would have picked up on that, but it's funnier that he didn't get it.
Brings me back to a S2 scene where Kuroo tells Kenma outright about how Kenma looks like he got his hands on a new game, all excited, whenever he's watching Hinata play, but Kenma still stubbornly denies it :"D It is funny how he seems to be at least partially unaware of the influence Hinata has on him
Kenma would never feel bad about clipping Hinata's wings. Kenma doesn't like when the game is over because it means the puzzle is solved, and thus the entertainment he gets from solving it is gone. Kenma wants to thoroughly and completely clip Hinata's wings because he views Hinata as an anomaly, a unique puzzle to solve on the court. But he also wants Hinata to continue to adapt and "stay interesting", an everchanging and adapting puzzle. Kenma starts to get disappointed because he thinks he's got Hinata completely figured out, and thinks that Hinata is boring now. If you've ever seen a cat hunting a mouse, its not uncommon for them to toy with it. They will catch it, and then let it go just to chase them again until the mouse either dies or gives up in exhaustion. And then the cat will get bored and leave it be.
Why Kuro said “may Shrimpy always be in good health” is because Kenma likes Hinata and he observes Hinata too much. Moreover Kuro thought Kenma is scary and felt bad for Hinata so he wished for Hinata to have a good health always. Its a Japanese thinking so it maybe confusing 😅
I didn’t even know that it was a Japanese thing but yeah I think Kuroo is starting to feel sympathetic towards Hinata. Kuroo knows that Kenma doesn’t take a liking to people often. But when he does take a liking to them, he has extremely high expectations for them. So Kuroo is kind of telling Hinata “my condolences Shrimpy” because Kenma is such a hard person to please and Kuroo knows this from experience.

Re: the animation re-use (at 22:00): while they do re-use the animation, it wasn't Kuroo the first time, that is Fukunaga both times. You can tell because Yaku is in and Lev is up front, so Kuroo would be out.

I think it's not that hard to understand why Kenma likes Hinata. Kenma is shy and introverted. However is good reading people. Hinata was too pure and showed genuine interest when they met the first time which is kind of rare to him. Besides, as a volleyball player Hinata is for Kenma what can't find in videogames, a puzzle is always interesting even if has been beaten before. As Kenma said in the movie, they aren't rivals, they're just friends.

I think stealing the joy of Hinata is a part of the reason why Kenma is so glum. But I think the main reason relates to the flashback when Kenma says beating game is worse than a game over. His strategy is working too perfectly. He isn’t being challenged because Karasuno isn’t adapting so he feels like he’s beaten the game.
The reason Kenma is so sad at the end of this that his plan is working, is because the reason he likes playing against Hinata is that he always surprises him and does something unexpected, which then challenges Kenma to think up new strategies in response. But at this point in the game, everything is going the way Kenma planned it and Hinata isn't doing anything unexpected to overcome it

Kenma’s not really driven but I think he kind of gravitates towards those who are like Hinata and Kuroo. I think a part of him wishes he was like those two and appreciates how they both care for him and wants him to have fun in volleyball. Hinata and Kuroo both are good with people and have that charismatic personality so it’s not strange that Kenma takes a liking to both of them. Personally I think Kenma connecting so much with Hinata speaks more towards Hinata's ability to "match energy". You see instances of this all throughout the show: hyper jumping with Inouka from nekoma, somber and respectful against Aone from Date ko, not being intimidated by Kageyama and being able to just criticize him even though their skill level is so different, and so so many different examples of how Hinata is just naturally great at picking up how to connect with different people. Not even Kenma fully understands how he got so comfortable with Hinata but that's just Hinata's natural ability.
This section was depressing to read in the manga because it was covered in more detail then the movie was able to and the shutdown of Hinata was felt by the whole team. The guy who up until now against the hardest opponents they ever faught stayed upbeat and even carried the team emotionally in the last game is now quite and completely missing on the offense. Not to mention your offense is centered around Hinata's decoy roll drawing blockers away from the other hitters. The entire team is being dragged down with Hinata's depression right now despite maintaining the lead this set up to now.

If you look at the background, the environment is 3d, and if you look at the charcters, while they aren't 3d, their perspective isn't drastically changing. Not that this is saying that this isn't impressive, but it is to say that they have developed techniques to make something look impressive. For a comparison, the shot at 4:11 (and there are others like it in the anime, season 3 episode 10 for example with the final point) isn't as impressive of the same feat 30 years ago like Beauty and the Beast or An American Tale: Fival goes west.

So I believe the volleyballs are 3D animated they just composite it very well. It’s not distracting like other 3D animation.
