one of my favorite dips EVER. goes so well with so many non thai dishes. my favorite would be iraqi grilled fish (nam jim seafood is a bit too strong for that since the dish is supposed to be more mild imo). the tips about the lime juice and soaking the chillis are revolutionary tho cuz i always make it too spicy for me because i like the aroma of the chillis 😭
I’ve made it with both garlic and shallot but not together. Must try this. Looks delicious - having Panang curry tonight so it’ll be great to add to that 😊

I like the aroma and flavors of the chilis too. It's nice to have it mild sometimes so it can be enjoyed more!
You're the first I've seen to refer to this as Salt and Pepper. It's very accurate, but so much better than regular salt and pepper.
