Coconut Chiffon Cake

- 8 eggyolks
80 g sugar
100 ml oil
100 ml coconut milk or cream
1 tsp vanilla
1 tsp coconut essence
1/4 tsp salt
200 g cake flour
1/3 cup desiccated coconut
FOr meringue
8 egg whites
100 g sugar
1/2 tsp cream of tartar

To ice and cover the cake I use
140 g egg whites
280 g sugar
420 g butter
1tbsp of coconut cream or coconut milk
1 tsp coconut essence
1 cup of desiccated coconut for garnish
i made this 2 days ago for my mother's birthday . chiffon is soft and moist. i filled the cake with pastry cream and add powdered sugar while toasting the coconut for a little sweetness. reduce the amount of sugar for swiss meringue. they loved the cake because its not that sweet and the coconut taste is amazing. thanks for sharing the recipe..

Made this cake again today on my husband's request. This is a phenomenal recipe. The cake is so soft, light, and refreshening with perfect sweetness according to my taste.! I used fresh whipping cream icing. This recipe is a keeper for life!

The cake flour that you showed you use stated self-raising flour... isn't that different than cake flour? In the US, there's cake flour and there's self-raising flour. One more question... do you use that self-raising flour on all your chiffon cakes? TIA

Does the desiccated coconut change this chiffon cake compared to your other chiffon cakes? I have just made a coconut butter cake and a coconut chiffon cake (not your recipe) but both turned out odd. I had made the chiffon cake before with coffee and it was fluffy, light and moist. But the coconut version was heavier, not moist and did not taste like coconut (despite coconut essence). I think it is the desiccated coconut doing this? Your recipe is same ingredients but in different proportions to the chiffon I just made. I will try your recipe (comments below are encouraging) but before I do, do you have any advice? Am I doing something wrong or is this the texture of all cakes with desiccated coconut?

Hello! Love your chiffon recipes, especially since they don't require actual chiffon pans! The only problem is the amount of eggs within them. Do you perhaps have a chiffon cake recipe (using a normal round pan) that uses no more than 4 eggs? I'm just really iffy with using a lot of eggs in recipes.

cream of tartar is an acid that helps stabilise egg whites, if you cannot find it substitute with vinegar or lemon juice

+Dina Dela Pena its either you over mix it , or it needs a little time in the oven, chiffon cake shrinks a little bit once it has cooled down but not allot
