I was pondering for such a long time whether I should buy Tapioca Maltodextrin powder or not. It’s not that readily available, and it comes in a big bucket, so I wanted to make sure that there are a lot of applications to it in the kitchen. Finally, I’ve decided to purchase it. And, I’m very happy that I did!
In this video I will share with you, guys,101 basic info on this Molecular Cuisine ingredient. I will explain what Tapioca Maltodextrin is, how it functions and interacts with fats, how it is different from natural starches and how you can use it in cooking.
Tapioca Maltodextrin is a modified starch, but if you want to learn more about natural starches, check out my earlier video on KUZU, where I talk in more details on that topic: • Kuzu (Kudzu) starch | ...
FYI, Tapioca Maltodextrin powder is also often referred to as N-Zorbit M, by some manufactures. It is possible, however that the proportions would not be exactly the same... I cannot test it for you, I do not have N-Zorbit M right now.
There’re also more applications to Tapioca Maltodextrin in molecular cuisine, than just making powders from high in fat products. And, I will me making a video on that very shortly, so make sure to subscribe. Thanks! - Навчання та стиль
Have you used Tapioca Maltodextrin before?🤓 What have you cooked with it?
Haven't use it for cooking, I mix it with liquid ass spray to make stink bombs, I covertly sprinkle some on my boss floor daily so he can smell it. He tossed his trash can away one day and another day he called the plumber service in the building. I love It!
OMG. You always comes out with amazing tips and recipes! How brilliant you are😘😘😘
Natali your videos are amazing! I have learned so much and implemented many skills into my cooking. Thank you very much, please keep going :)

@@ChefRudakova You da boss 😎💪
Chef! great stuff. any suggestions on how this stuff can be used in baking? I'd love to have the pop of flavor it seems maltodextrin can have when it combines with saliva/a more liquid element.
Congratulations chef for 5 k subscriber
Rajeev Negi thanks 😊
Thanks for this Video, Amazing 🤩 🙏👌❤️
my pleasure 🤓✌🏻
@@ChefRudakova 🙏🙏❤️
great explanation , very detailed . thank you :) Is it possible to convert semi-liquid caramel into powder form using maltodextrin ?
I’m not sure. TM is good for converting fats to powders… caramel is not pure fat… so I’d say it’s not perfect… but I encourage you to try🤓 sometimes if you test, you come up with surprising results!✌🏻
Love it, thanks! Questions though. I have some and would love to use it, it not sure how to store the end product so it doesn’t absorb humidity. If it does, can you turn it into powder again or is it lost at that point? Love your work! 🙂❤️
Shabnam Copper Vanilla thanks! Store it in airtight container and nothing would happen 🤓
Thank a lot chef l from thailand 😍
I really love your contents. God bless
Thank you! You too!
This was so cool And I love the editing 😂🤣 Bart Simpson really threw me off I loveed i
🤪✌🏻
Awesome channel! Would love to see a video on how to make the thin tarlet shells served as canapes at places like Frantzen.
Thank you 😊 Share a photo of these target shells, I’ll try to replicate them🤓
@@ChefRudakova They seem to know how to make the thinnest tartlets of any flavor combo... The celeriac ones are probably the most famous! instagram.com/p/CD8fiNxDW3S/
Pea and nori ones too: instagram.com/p/CDbAi3LjsG2/. Crazy!
You know, I think I know exactly how it’s done🤔 I’m gonna test it tomorrow & let you know 🤓
@@ChefRudakova love it!
I loved your videos, thank you so much. If I make that powder for ex. Even peanuts powder after that do you think I can make like a crumble to get flavor in my crumble? I can put in the oven the powder? Thank you 😊
Glad you liked it! You can absolutely add it to your crumble. But bear in mind that the flavour of the powdered fats like this are way milder than the initial ingredient. I'm not sure about the oven. I hope it helped you a little🤓✌
Are you able to use this to make honey powder?
Great Video! 💯
One quick question:
But if you want to get rid of the fat in the peanut butter (the goal is to obtain peanut butter powder WITHOUT its fat). is it possible to obtain it this way?
I am guessing that we will somehow need to filter the taipoca maltodextrin powder itself from the rest of the peanut butter. Is this possible?
thank you 🤓✌🏻 to answer your question: I don't think so... but nothing is impossible if you put your mind into it
Perhaps reducing the oil content by using dry roasted peanuts however you might try this original peanut butter recipe first. Then you’ll have a control end product wise. Due to the reduction in fats with dry roasted you’ll want to experiment a bit with the tapioca powder. As such you will loose the advantage of significantly increased volume.
I wondered this myself. I get a "6 seed and nut butter" from Costco, and I love the flavor but i don't want to eat tons of calories from oil and fat. If anyone figures out an easy way to get the oil out, let us know!!
Amazing video! Thank you. Could I use tapioca maltodextrin to make a buttercream that dries hard? Thank you.
Thank you. I haven't tried that. If you do, let me know please 🤓✌🏻
@@ChefRudakova will do! Alot of dog cake frostings that dry hard use it. I'll let you know how it goes.
Great tips chef! Can I also use mayo or chili sauce to be powdered using this method? And what is the suggested ratio?
Good question, Sandy!😉 You can use any products, that are high in fat for this method. I personally, have not powdered neither mayo nor chili sauce, so what I can advice you is to start with the same ratio as in this video and then adjust it (add more TM) if necessary. Let me know how it will work for your products, I’m really curious to find out🤓✌🏻
@@ChefRudakova I'll get back to you once it works 😄. Does TM dissolve in water to return the mixed back to early form?
@@sandys7784 hi may i know the update on your project? And was it dissolvable in water?
Can use with aqueous products? Water?
Will this work with corn maltodextrin?
If properly sealed, what kind of shelf life does peanut butter powder have?
How long can be stored?
Hello Chef Natalia , great channel and inspiration for me . When i saw video and there was butter so it came idea in my mind if You Can try to make Brown butter icecream , its signature dessert dish in Maaemo. Bcs i love taste of brown butter and sure You do too 👊🙂 i know lot of icecream from anything but if there is so much fat like to make icecream from butter its not gonna split ?
Thanks
Adam Andrejko Cool idea! Thanks for sharing it, I’ll definitely check it out 🤓✌🏻
i Have a question, by using this modified strach does any of the fats gets removed? In products such a PB2 (peanut butter powder), do they use this type of techinque to remove the fats?, loved your video.
PB2 fit is made from a product called peanut flour. The oil is squeezed out, and a waste product of that process is ground up.
Is 100:40 is the general usage for maltodextrin?
Chef Rudakova, the peanut butter powder I buy does not have tapioca maltodextrin so why use it?
Thanks for nice videos
Upload the next video 😊😍❤
Already uploaded!🤓✌🏻
Can power become liquid again just super curious thank you chef🙏🏾
yes, if you add a little water🤓✌🏻
okay but how do we extract the oil?
Does the final peanut butter powder have the benefits of about 90% lower calories? I have seen a video where you simply mix 2 tables spoons of water with 1 table spoon of peanut butter powder in order to make peanut butter out of it. Will this work the same way and have the same health benefits to incorporate peanut butter into your low calorie diet?
Yes, it's absolutely correct. If you then take this powder and mix it with water, you'll get a really diluted peanut butter with much less calories per gram. But it won't be as intense in peanut butter flavour either 🤓
@@ChefRudakova That's amazing, thanks for letting me know ❤️
We use it with cream of coconut to make coconut snow
Great idea 👍🏻
it works very well with melted white chocolate
Great idea 👍🏻 How do you use you White Chocolate powder?
@@ChefRudakova i use it for decoration of desserts :) under ice cream or sorbets
She's is definitely wify material 😍💯
It would be nice if the writing was darker so we can see it. By time you see it it is gone. Also keep on the screen longer to.
