    I've tried both ways, but I think if you want a donut that tastes like it came from a bakery or Krispy Kreme or local donut shop, use shortening not butter, butter works but it always taste like a homemade donut, which is good, but for that true bakery tasting donut, some kind of melted shortening works best. You can't go wrong either way, but I was very surprised they chose butter. Have a great day everyone

    Go north on Hamilton and turn left on State Avenue. That's where Granny's Donuts is. I know how to work with yeast. I've done it for 50 years. But for donuts, I'm not sure anybody could do better than Granny's. She even stuffs the donut holes with chocolate, raspberry, lemon, Bavarian cream... it's a little slice of heaven right here in central North Carolina. 💞

      This recipe uses all purpose flour, so is not gluten free.

      I find reworking the dough makes them tougher and it takes forever to let it rest so you can roll it again. Just cut the scraps into bits and proof/fry/glaze them. They’re just as good as the donuts.

    I've never wanted to make donuts at home before (they generally only sound good every couple of months to me anyway), but OMG.
    And the muffins look even better!!!
    (I don't especially love chocolate ice cream to begin with .... I love chocolate. And I love ice cream. But their marriage doesn't really work for me, so vegan options aren't even on my radar.)

      Not specifically Swedish, but ATK has reviewed a couple of brands many years ago and updated their review almost four years ago reaffirming their top choice. They do need to revisit this topic and add more brands.

      @@ArtU4All They are very special. Compostable, reuseable, they hold about 20 X their weight in water and dry out super fast. Durable, low cost, good replacement for paper towels. I use them in the kitchen for washing dishes, and cleaning, grease spills, whatever. Basically they dry out and feel like cardboard, but when wet they are cloth like and sponge like at the same time. Bacteria does not collect on them. They work fine with household cleaners. You can also use them on your face like a washcloth. They can go in your washing machine if you want, not your dryer. I just clean mine with a little dish soap and rinse a few times.

    Whenever I make yeasted doughnuts with all purpose flour, they always seem a little tough and a day later the texture is like bread.
    Does anyone know what the doughnut shops use for their yeasted doughnuts? From my research some name brand companies sell a mix for yeasted doughnuts. But these are in fifty pound bags.
    I don't know if their mixes aid in longer shelf life before and after preparation, or if it's different than all purpose flour strictly to fry better.

      you could try replacing some of the AP flour with cake flour, or experiment with a mix of bread and cake flour?

      Thanks, yes that's what I'm experimenting with but I haven't yet reached a good ratio with the AP and cake flour.

    ATK loves plastic wrap! Always offended to see gleeful use of single use stuff bound to languish in landfills for many years to come! Do better ATK. Be good stewards & work around your love affair with plastic wrap!
    We'd much prefer a green choice.
