Cucumber Mango Salad Recipe | Cucumber Mango Salad with Sesame Seeds
Ingredients:
1 English cucumber, diced & ends trimmed
2 Mangoes, peeled & diced
1 small onion, finely diced
1 Anaheim red pepper, finely chopped
1 teaspoon sesame seeds
For The Honey Lime Dressing:
Juice from 2 limes
Zest from 1 lime
1 tablespoon honey
1 tablespoon olive oil
2 tablespoons white wine vinegar
2 tablespoons cilantro or parsley, finely chopped
1 garlic clove, minced
1 Anaheim red pepper, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
1. In a small bowl, add honey, lime juice, olive oil, lime zest, white wine vinegar, cilantro or parsley, minced garlic, red pepper, salt, and black pepper. Whisk all the dressing ingredients thoroughly until combined.
2. Dice the mango flesh into bite-sized pieces.
3. Dice cucumber into similar sized or bite-sized pieces as mango without peeling.
4. In a large salad bowl, combine the diced cucumber, mango, and red onion.
5. Pour honey lime dressing over cucumber, mango and onion mixture. Gently toss to ensure all the ingredients are coated evenly with the dressing. Taste and adjust the seasoning if needed.
6. Sprinkle some Anaheim red peppers and sesame seeds.
7. Serve and enjoy the refreshing healthy Cucumber Mango Salad!🥗
