  • We decided a long time ago that we would be smoking our own meat, mostly because of all the additional chemicals that are added when you let the butcher do it. And this saves us a lot of money. We used some apple wood and got our bacon and ham smoked. With the ham, we sliced it thin and packaged it into ham deli meat for sandwiches.
    While smoking meat we had a huge hail/rain storm that came and flooded our garden, however, everything did fine once the sun came out.
    Smoking meat is something anyone can do.

    Oh I do like BBQ's. Every summer my family get together over at my sister's place and feast till we drop. Cold beers and Salad by the bucket. always in mid July. I will let you know how it went. Have a great day....

    IMO, I think your end temp is a bit high. Temps over 150º will melt the fat creating flareups. Flareups do not taste good. I base this observation on my many years of
    making sausage.

    Guys I’m just saying that if you want a super awesome smoke flavour we have bee using 💎 diamond willow you have lots of it by the creek you fixed that culvert neatness sweetest,and flavour great for sausage also. Growing up in a Ukrainian community in Manitoba we also used poplar or alder but the 🪵 💎wood of choice was willow
