Another way to look at it is when Strahd made his deal with the Dark Powers, he not only cursed himself and his domain but his subjects as well. Tatyana was one on of his subjects and thus shared in his curse.

@@Tabletop_ai anything is possible, maybe one day we can get her side of the story. She was a peasant girl after all, maybe she made her own deal with the Dark Powers at a chance for a better life. Or maybe she crossed a vistani who placed a curse on her.
