- Ghee holds a special place in Indian cuisine as a result of the geographical centrality of the Gangetic plains, where dairy farming has been a critical civilisational activity for 5-8000 years at the very least. It also finds a special role in Vedic rituals, so, unsurprisingly, people believe it has special properties and tend to get possessive about methods of preparation.
Some key things to remember
1. Ghee is mostly saturated fat. Most animal sources of fat tend to be saturated. In fact, the Tamil word for ghee “nei” is also the word to describe the fat under the skin of chicken, goats, pigs or cattle. Saturated fats have a complicated relationship with the science of nutrition. We have gone from demonising them irrationally to now largely settling on a “it’s complicated, so enjoy it but don’t overdo it” consensus.
2. It contains fat-soluble vitamins from milk, so this is a crucial source of micronutrients for vegetarians in India.
3. There is no one “ideal” method to make ghee. It can be made in many ways and each region in India has different preferences in terms of how much “cooked” flavour they like. Some like it light yellow and less cooked while others like it medium brown/well cooked. Some add other flavours while others don’t. Some make it from fat separated from yoghurt (which results in a more sophisticated but funky flavour profile) while others make it from cream or butter. Some like it made from buffalo milk while others like it made with cow milk.
Amidst all this - it’s important to ignore marketing hype like A1/A2 ghee because ghee is fat, and A1/A2 is a protein distinction. This is like believing that those who wear Armani clothes are good at swimming (you have to take your clothes off before swimming).

There is one more method of extraction of ghee. Boli the milk, take out the cream over it after cooling. After collection add LACTOBAC culture in it keep it at least for one day Or more to get it sour , till the time bacteria has done it's work then stear it and get butter separated from buttermilk.
Butter is heated in pot slowly so that water get evaporated and separate liquid out that's the pure Ayurvedic ghee

Ghee made from yoghurt is healthier due to more CLA (conjugated linoleic acid); one of healthy fatty acids.
But, it will have lesser shelf-life than made from cream

I got a package of Kerrygold Irish butter in the fridge, it is salted butter. Is it OK to convert into ghee, or will the salt content ruin it???

Ghee contain dha which is good for body health.basically vegetarian souece of omega 6 are not good as ala is very less converted into dha. So ghee is very good for health.

@@mlg1279 A2 ghee is better than A2. When the difference between A2 and A1 is on the protein profile, which is anyhow removed making A2 and A1 ghee the same from nutrition perspective
@@mlg1279 please understand that to do ghee, you have to remove all proteins.. so amino acids (which are proteins present in A1/A2 ) are both removed. So, what difference will a A1 Ghee vs A2 Ghee have when the amino acids are removed from milk while making ghee. Ghee is 100% fat. understand with 0% protein.. so whether it is made from A1 milk or A2 milk , once converted to ghee is same

The milk from different breeds of cows will have varying amounts of nutrients. Not just a difference of A1 or A2 protein. And this difference most likely will carry towards milk products including ghee.

We also make ghee for at least 80_90 years.. From Nani then my mother now my self n my daughters. In ayurveda making of ghee is called.. 'संस्कारीत तुप' That means.. कल्चर्ड.

If you can do bilona, always prefer that.. that's extremely natural but cream method is also good & convenient.
Ghee made from butter (churning curd) is the best. Make yourself, market ones are some time adulterated

I was enjoying ghee, olive oil, coconut oil, and mustard oil. But starting last year, ghee smells rancid to me when I open a new jar, or when it's heating up in the pan. It used to smell like popcorn butter but my taste changed.
Everything should be consumed in moderation. Overdoing any food with too much sugar, salt, spices, oil and fat whether Indian Food or Foreign Food leads to Diabetes, Cardiovascular Diseases, Cancer via Obesity etc too (Malnutrition too leads to Various Illnesses also). Now, what again are Indian Food and Foreign Food? Because you have a lot of Indian Food that comes from Other Countries which has come through what we call the Indian People.
India has the 2nd Largest Number of Mixed Ancestry in the World proved by DNA after the Africans. India also has the World's 2nd Largest Number of Indigenous People after the Chinese in the World (comes under the Scheduled Tribes and Castes where many of the Scheduled Castes too are many of India's Indigenous People).
So, a lot of the Indian Food too originated from Various Nations while a lot of Foreign food which came into India recently and where there are Indian versions of those Foreign Food, well, Few Centuries later, if they still exist, they would be known just as Indian as the Indian food we have today
(No nation in this World has a Complete Global Product as there are Slight Variations in those Products including Electronics, Food and so on as changed to Local Tastes Too where Local Tastes just 1 factor. And No Nation in this world has Pure Local Genetics Too Unless 1 is like the Sentinelese Tribe that doesn't want to be contacted.....not all Indian scheduled tribes are uncontactable as many have mixed with rest of the world too)
Immunity is not genetics. Immunity depend on nutrients. If we do not have nutrients, even good genes cannot save you

Curd contains good bacteria, that's why it is good. The bacteria dies when heated. Ghee has more to do with taste than anything else.
Ayurveda suggests making ghee from curd. So, they must have some good reason behind it. It can be tested if there is any difference or not for validation purposes.
!00% agree with the content of this video. The first thing that a science or engineering student study in a lab is about error in measurements. For a sensible results the error is a tiny fraction of measured results. If it is comparable to results the results are not acceptable. If we belive that superfoods are going to bring superhealth we are wrong. But we go for superfoods and neglect basic healthy diets and exercise. Then how do we get an acceptable result. Super foods are not super what is super is your good old home foods in a moderate amount. The superfoods may or maynot SLIGHTLY improve it. The best superfood for me is handful of roasted peanut and a tiny piece of jaggery. I don't need any penut butter for almond butter.

Wasn’t that “Ghee is unhealthy” said as Myth. A bit confused by the comments. Animal fats are good, always better than starchy carbs. As a weightlifter I would have animal fats, animal protein and veggies on my plate and grains or starchy carbs only sparingly.

Does fermentation only affect flavor. It has nothing to do with the nutritional content of the ghee. So you are saying that Ghee made from cream and Ghee made from yogurt only differ in flavor, and their nutritional content is otherwise absolutely same.
Ghee is very healthy substutute for any modern oil which is deodourised with harsh chemical.ghee will keep your system running.joints moving .ofcourse overdoung it is bad.anything iverdone is bad.edp in cold climates ghee will keep your skin and digewtive system running smoothly.and also if had with rice .it will release glucose slowly into your system.
Ghee shouldn't be used as cooking oil. You should consume it in moderation.
Guys, Ayurveda does not give carte blanche to every one to consume ghee. It depends in your age and health factor. Go to a nearest QUALIFIED Ayurvedic doctor and ask.
A1 or A2 proteins do contribute in a small way to the flavour of the 'cooked' ghee so maybe there is a minor impact - just wondering.🤔

Any traditional food, which is keenly observed as acceptable by self, it can be consumed without any fear and advises. That's all.
this is so wrong. Traditional food means this food was advised by our ancestors. The life our ancestors lived say 300 years back included huge manual labour and hence thier food. Now with all desk jockeys , doing desk based jobs, the traditional food cannot be continued. we need to revisit instead of blindly eating what our ancestors ate, as the demands of body is not the same anymore. Food for thought?

Would love it if you could review Dr Pal Manikam's claims about eating only during specific time periods throughout the day failure to what would lead to fatty liver due to hormonal imbalance and other life threatening diseases. Is that true? It is impractical for me since I'm a night owl hence wanted you to throw some light on it.
Its impractical for most people as most people I know come from office at 8 pm. Its not possible to cook dinner and lunch all at breakfast and eat it.

It’s a bit of a mixed bag. Lots of conflicting studies, but current consensus is not clear enough to say “don’t eat it” cos clearly French, Malayalis and punjabis consume a fair bit and are mostly OK. There may also be a genetic component.
@@krishashok fats always comes with protein in nature like eggs with yolks, meats , milk and fish all with fats ... Our liver makes 70 to 80 percentage of cholesterol... Our cells,brain ect r made up of cholesterol... I consume lots of cholesterol/fats my blood markers r all great I am a Bengali my perents never had that much. I don't think genetics has a role.

I guess you're purely into secondary research only. At ground level you dont have much knowledge. At our goshala, we have 110 native cows like gir, kangeyam etc from which we get pure a2 milk and 65 hybrid cows like jerseys from which we get a1 milk. We use both cream method & bilona method to process ghee. There is a huge difference in A1 & A2.
