    1 Cup Whole Urad Dal
    4 Cups Idli Rice If we dont get idli rice, we can add 3 cups of parboiled rice and 1 cup raw rice
    1 tsp Fenugreek Seeds
    3 tsp Salt As Needed

    Hai Madam. As per your advice I used one and half cups of broken urad dal for idli. It was perfect. Idlis came out super soft. Thanks for the same. Everyone enjoyed.       Thank you 🙏🙏🙏 Pls beat the urad dal batter after grinding in mixie atleast for 5 mins. you can use handblender or whisk if you have , if not you can use a ladle to mix continuously for 3-4 mins atleast; this will aerate the urad dal batter in turn makes the idli soft. 🙏🙏🙏

    I have tried some of your recipes. They came out well. Today, I have soaked for Idlis and like one viewer, I was not sure how long I have to grind urad dhal but you answered in one of the comments. Thanks.
    Will it affect the idli softness if I grind urad dhal for more than 20 minutes or soak it more than 4 hrs?

      Grinding for more time sometimes make the dal runny. we need a ball like consistency with lightness . Soaking we can do for more than 4 hours or even overnight 🙏🙏😊

    Madam sowmya I want to give you a small tip grinding idly/dosa in mixie. 3 cups idly rice and 1 cup udit dal and 1 tsp fenugreek seeds. Idly rice, udit dal you may soak and keep in fridge. After 4 hours you may grind with cold water kept in fridge. You don’t require Arul. I tried this. Idly is soft and dosa is so crisp. You may try and give your valuable comments 🙏. Sujatha Hyderabad

      Madam, 3:1 ratio will do , while grinding in mixer jar, otherwise like Sowmya said, 4:1 is the correct proportion. Sometimes, instead of adding poha or javvarisi, you can add old cooked rice also. That time also, idly or dosa will come properly.

    Very useful video and well presented.
    Seems you have elgi grinder, and one problem I see is that lots of full lentil gets stuck to the sides and despite pushing them down many times, still you get full lentils in the dough.
    Nowadays people are adding sabu dhana (chovvarishi) too and this results in idli becoming more spongy and fluffy, but there is a problem too, the idli touches the plate above and top portion of the idli sticks there. So the idly you get loses it shape.
    I thought you will show the mixing of urad dough and rice dough together with hand, becuse some people say our hands pass on the bacteria for fermentation.
    One doubt, can we not put the poha together with rice?

      Thank you 🙏 Yeah Sabudana helps to get soft idli Always add only 3/4th amount of batter in each idli mould that way it won't get stuck with the top plate.🙏

    Hai Madam. One question. As per your proportion you are using one full urad dal. Here I use broken urad dal. So instead should I use two urad dal to 4 rice. Please reply at your convenience. Take care.👍 Always.🙏

      Please use 1.5 cups of split urad dal. My sister always uses split urad dal and i check with her. She uses 1.5 cups. Try it once and if you feel more softness needed pls increase to 2 cups🙏🙏

      if u are living in western part of US-CA u will get good idli batter from Sastha, ps search in Google.

    Some people soak Rice , urad dal and fenugreek seeds together and grind to prepare the batter.
    Ur views on it??.

      We can do that if we want to use it only for dosa and adai. I don't recommend that method for idli. Idli needs nice fluffy urad dal batter which can be possible if we grind the urad dal separately.

    Madam i was told and i have been using my hand to whip the batter well to improve the fermentation process .is it true or ladle is enough as you did.

      I always use ladle and idli's are soft everytime. Fermentation is the main secret to success. 😊🙏🙏

      @@Subbuskitchenpage the bacteria which helps to ferment is from the hand ,that is what we were told but how come ladle will help to ferment madam .,because all along you would have used this method and find it ok.but old school taught me to use hand.i will give it a try once.

    This is very helpful. I am going to try adding Avval or Poha to my batter. Did you mean the thin Poha for this batter?

    Total duration of grinding is 1 hour?
    For urad dal u mentioned only 5to 7 mts. Right?

      Urad dal should be grind about 20 mins. First 5-7 mins with 1 cup of water and then add 1/2 more cup and grind for another 10-12 mins. overall around 20mins of grinding urad dal should be good. As you said 1 hour of total grinding both urad dal and rice. 🙏🙏😊

    My question is about ratio. Can I use equal amounts of rice and Ural daal?

      More the urad dal, idli comes out sticky and flat. 4:1 is the ratio if you use wet grinder and 4: 1.5 or 2 if you use mixer grinder

    How long do you grind in wet grinder? Please share the time for uradh deal and rice in wet grinder?

      Usually around 20 mins for urad dal and around 30-35 mins or till the rice batter becomes smooth 🙏🙏🙏
