    few tips from the middle east:
    add the garlic an salt AFTER the water and lemon. you'll have more control on the tahini's taste.
    NEVER use warm water- ice cold water or even ice cubes makes the tahini creamy and white, and cancels some of the bitternes of the tahini.
    i also love adding pinch of cumin and a lot of herbs like parsley and mint.
    serve it with falafel, shawarma, kabab and shaksshuka and it is f-ing great

      Really? I'm an Arab as well (Palestinian) and in my mother has used water. I think she's used yogurt before as well... But usually it's water.

      i just asked my mom & she said that even where we are from they use yogurt too. my bad, just because i am used to using water, which shows you that one way is not the only one. also, food is all dependent on taste.

    This Tahini sauce, I know not well,
    I follow Chef John, so what the hell.
    Too much garlic, no such thing,
    in sauce, or steak, or chicken wing!
    Bring the garlic, some cayenne too,
    flavors right for me and for you!
    Texture so right it holds a line
    fresh on your meal or even mine.
    Chef John will shine quite like no other,

    Tahini paste can also be used in sweet recipes. Try mixing it with some honey and a pinch (very small pinch) of cinnamon. It makes a great spread and/or dip for bread. Where I come from there's a confectionery called halvas, which is made with tahini paste. We usually eat it during fasting periods because it contains no animal products. There's also a sweet pastry called tahinopita, again with tahini paste as a main ingredient.

    Just wanted to say that instead of using lemon juice and olive oil, we use homemade yogurt when we make this at home. It comes out with a good texture and good taste, and yes, we do like a little extra garlic =).
    Although, my family does go through the trouble of starting from scratch and roasting the sesame seeds to make the paste. Roasting the sesame seeds definitely changes up the flavor a little, and the yogurt helps balance that.

    I have a suggestion as an Egyptian expert in Tahini, adding cumin and chilli flakes to the dressing with the lemon juice and one glove of garlic will give it a great taste. Enjoy! :-)

    As a Middle-eastern I can tell you that you forgot to put one of the most important ingredients: cumin and black pepper.
    Also you add a bet of white vinegar to thicken it up a bit before pouring in water.

    just want to give a quick language info:
    in the correct Arabic it's pronounced (Tahinah) طحينه with a short a, and a light h. but some dialects in the northern region of middle east ( Lebanon, Syria .. etc) they pronounce it Tahini, with a short i, i mean the last i only.
    ant's a derived word from (Tahn) طحن means grounding, it''s basically sesame seeds grounded or smashed. so it's named after the process.

    The best tahini:
    a cup of tahini
    juice from half a lemon
    garlic (not too much)
    cumin
    salt
    pepper
    parsley
    hot paprika
    1/3 cup of humus paste
    mix with a hand blender to make it smooth and fluffy.
    Then add COLD water slowly and mix until wanted consistency.

    Nice video. A comment and a couple of suggestions: 1. You should use ice-cold water and not warm water. It makes the tahini come out much paler, almost white. I don't think it alters taste or texture, but it's pretty and customary around here.
    2. You should try adding a pinch of cumin to your tahini. It's great.
    3. A very popular and extremely delicious variety is Lebanese green tahini - after making the tahini sauce, stir in (or blend in) A LOT of finely chopped parsley. The oils from the parsley color the whole thing a lovely shade of green and the taste is a lot fresher, works amazing on salads (though not as popular on fried stuff like falalfel).

    Thanks, Chef John! This recipe turned out GREAT!! I only had a fresh lime on hand, so I used that and it still turned out AMAZING! I was conservative with the garlic as you suggested, but ended up adding a little more garlic anyway. We put this on falafels and it was YUM!!! Thank you for the awesome recipe!

    Actually, in the province in Iran that my family lived, we have sesame seed paste all the time!! It's an acquired taste for sure, but we have it most often with dates and it's one of the favourite snacks there!

    As an Israeli Im bound to love Tahini and Falafel (looking forward to the vid), I also make Tahini on a weekly basis and I recommend adding a bit of Cumin and black pepper. (also chopped parsley if you like it.)

    I totally feel your pain, chef John, I'm a garlic lover and many times ruin a recipe because of the garlic overload. So, could the next "mystery" recipe be falafel? I think I may be right! (Nevermind... just saw the end of the video and saw that yes... I was right). =)

      I try to neutralize it with some acidity (lemon juice or vinegard) before ... it takes out some of the strenght

    I use a zester for the garlic then add to the fresh squeezed lemon juice, cover refrigerat for up to 2hrs the use a fine mesh strainer to add to the tahini, not only does the lemon juice tame the garlic but not having chunks of garlic in the hummus or tahini makes it smoother

    In my opinion u must replace the water with yogurt like 3/2 tablespoon of yogurt if you dont have it use sour cream
    And eat tahinie with kebab
    Some times i eat it with plain burger

    Jordanian tip : Just do this directly mixing the tahini, some oil and the rest of the ingredients with hummus in a dish. Now you have super nice hummus ready :). No need to freeze it or anything.

    John, I have perfectly edible non-poisonous sumac all over my farm. You just have to google it and look closely at the images and learn the difference between edible and non-edible plants. I have loads of staghorn sumac. You are unlikely to encounter poison sumac unless you're in a bog or wetlands. The berries are green or white and hang down like grapes.
    Harmless edible sumacs generally grow on dry areas, fields, fencerows, roadsides. I don't pick from roadsides due to contamination from car exhaust. The edible berries are vivid red, and almost always in upright, pointed, horn or cone shaped clusters.

    This is an interesting mixture using tahini. My father is from the Middle East and I always watched him mix fresh plain yogurt with tahini (not a lot of tahini actually, it's runny but very dense in taste). It is so simple but an amazinggggg topping for wraps, döners (or gyros), falafel, kibbeh, or even shish kebabs.

    Definitely making this! Got lotsa sesame seeds and olive oil, so tahini is really easy to bash up. Other then that, lemons garlic and water are staples!

    Living in Israel, I'd say humus is the ketchup of the middle east while tahina is more like the mustard. Though it may be different in other countries.
    So much so, that I thought you were going to pair the tahina with kebabs, since humus is usually the main condiment of choice with Falafel (though people add tahina too).

      ***** Ha, you're the first Israeli that I've heard say that. Actually, homemade. Whenever I have it here, it's different. I typically like vinegar, but I guess the overly - vinegar Heinz killed it for me. Cheapened the flavor, paired with every fast food burger that I ever had. It reminds me of Hersheys chocolate and how they use sour milk for their basic, flagship chocolate. Also, I dislike their Anti-Israeli politics. John Kerry's wife is the daughter of that family, so.. Not buying.

    In Egypt Garlic is only used when tahina is served with Fish...also instead of water try throwing in a big spoon of yogurt, if its too think ad a few drops of water...and if you make the paste yourself at home add some raw peanuts in there.
    Also there are many varieties of sweet tahina...the most popular and easiest is adding it to molasses (and maybe throw in some grounded peanuts or Pistachio) and eat it with pita bread...Perfection!

    I've made CJ's wonderful falafel recipe _so_ often with this sauce. His could be rescued, adding more tahini, etc. to dilute the excess garlic back to standard strength, what's left being frozen. As falafels and this sauce are vegan, vegetarian, gluten-free, crispy and delicious, you get a dish that appeals to virtually everyone. As drinks parties 'nibbles', _zoomph_ and they're gone!

    Thank you Chef John for the Tahini Sauce with your twist ! We would add chopped parsley with Aleppo Red Pepper (Armenian style) and cumin powder. This is the basic Lebanese way . It's yummy with falafel, shawerma etc Enjoy !

    That mistake you did at the beginning of the video where you added a lot of garlic is actually *crucial* in one of our mideast appetizers. fateh, with hummus or chicken both are delicious and require lots of garlic ^_^

    Chef John! As a long time follower, and American living in Israel, this is great! I make this often here in Haifa, and this is an excellent recipe,including the olive oil. Here, we pronounce it "t'hina." Emphasis on the Hebrew, choking on your tongue "H" sound. I cannot wait to see your falafel recipe. Keep up the excellent videos, I use them often! In fact, I made your tomato bisque just last week. Also, I have an absolutely incredible video/recipe suggestion for you, if you're interested.. I've customized this traditional recipe myself, and I think it would be great for your channel. Let me know. It's the perfect follow-up to any Mediterranean dishes.

    Tahini: the catsup of the Middle East ... Man o' man, to say nothing of it's nutritional value! Catsup never had it so good. For added protein, it shines in smoothies; just a tablespoon, or a little bit more; but not two, or it will become bitter. Some people like peanut butter. I am totally dedicated to tahini! 😘

    I could put tahini on everything. Sometimes, I make it into a salad dressing which is just awesome. This version is quite different from my family's version but I'm sure its just as good.
