It would have been better to cook it longer at a lower temperature, like 275-300 instead of 375. This way you get less carry over cooking, and also less brown to pink gradient throughout the piece of meat (more even pink).
I think that medium is actually perfect on a fatty cut like prime rib. For strip or filet, 100% medium rare or even rare, but I think your result here is perfect!
