Today we prepare medieval oat soup from the Liber de Coquina, written in the 14th century.
Ingredients:
oat flour
chicken
spinach
spices (black pepper, cloves, nutmeg)
lard
salt

I'll bet this would be good with chickpeas or white beans, and as such would have been good for fast days
This is pretty good. I couldn't find oat flour so I used oatmeal and wheat flour. I couldn't feel the spinach but it is probably a matter of proportions. I will definitely do it again and add it to my list of medieval dishes.

The information on the consumption of oats is interesting, it seems that the Romans had better taste, preferring wheat, which perhaps the northern peoples knew less about or struggled more to cultivate and therefore adapted to oats.
