Imagine this: Grom knew that Eltharion would eventually capture him, so before he faces him he cuts a part of his arm off and hides it in a cave. His arm then grows back normally while the other piece is basically in stasis. Eltharion then captures and tortures Grom, burning his body. But Gork and Mork are so impressed with Grom's WAAGH that his spirit is transferred to his hidden arm. Over a period of 200 years up to the current start date of TW Warhammer, Grom's body slowly regenerates...until he is ready to reveal himself to the Orcs of Massif Orcal,make a new WAAGH and get revenge on the pointy ear gits.

Well, the immortalz are actually "immortal" now, like they are in lore
In-game stats often change and vary between 1 and 2, so there's no much point thinking about it.
The most skilled fighter of all time in lore might be Anaerion, but the most skilled fighter alive is Ungrim Ironfist, no doubt. The most powerful fighter melee fighter is a different story. If we exclude beings that could be considered gods (Green Knight, Kholek, Grombrindal), the answer is a toss-up between Gotrek, Grimgor and Abhorash.
Best infantry is probably the swordmasters. Best cavalry are the Blood knights.
Grail knights, chaos knights and blood knights are superior to dragon princes.

Lorewise swordmasters, Temple guard or chaos chosen are the best infantry.
