Because he felt like a slave to the Jedi. They called him the chosen one yet they held him back and disrespected him by not promoting him to master. Then they expected him to spy on the one person that actually seemed to respect him and was a father figure to him. He was never free to be his own person his entire life.
"Lord Vader, you are responsible for not defending the Death Star. I accuse you of failure in the Galactic Empire. You will demoted in rank, Lord, and set back to Anakin Skywalker."

It's in that flashback scene where Vader has a shattering realization: he has always been a slave, a subordinate, a servant, an inferior, and he always will be.

The most interesting thing about this story is the actual lesson Palpatine wanted to teach Vader.
Everything was fine for this governor until he went on a power trip and began to disobey imperial policies and endanger his own men and precious empire resources just to test his new "toy" (Vader). By doing so, he himself became the actual "greatest threat" Vader could find. And Vader was even able to get around the fact that he could not disobey the governor, by having the crab do the dirty work for him.
This video doesn't show it, but as Vader stands in place with his "lesson learned", Palpatine senses everything that happened and is extremely satisfied with Vader at the end.
The lesson itself: those who go against the Emperor's orders will face consequences. For Vader, it was the humiliation of having to serve a lowly governor. For the governor... the story speaks for itself.
This is why I admire Palpatine, one of the greatest intellectual titans to ever be created. Every aspect about him is interesting and it I ask myself. Did palpating create Anakin specifically on tattooine knowing he’d be born into a slave family so that it would already ignite the Darkside within him creating rage in the shadows of a young boy. At the time Anakin was innocent but definitely already held rage for the mistreatment of his mother and himself. If this is true which I’m sure it is, that just adds another layer to his master plan. I want a Plaguis movie, we need a rated R super dark Plaguis movie. The Sith are way more interesting and in my opinion hold a way stronger connection then most Jedi because in aspects they use just the force but focus more on it’s dark areas.
And you see why Darth Vader was destined to chuck Palpatine down a garbage chute.🚮🚮🚮

Also, the hubris of all these imperials is ridiculous. They all think they're going to pull one over on Vader like he's not going to remember or get back at them. There are all these stories about him getting revenge and they still keep trying to embarrass him like they're going to get away with it

That is BS. Windu wasn't disrespecting Anakin. He was dealing with an uncomfortable situation that had been created by Sidious to create tension between Anakin and the council the best way he could. I guess he could have said please but considering that Anakin was shouting about how strong he was and how he deserved to be a Master because of his great strength I think that Mace was the consummate Jedi Master. He controlled his emotions and told the young punk to sit down. Anakin always thought he was greater than what he really was because he was lucky. If he had worked hard and studied with diligence he would have been the greatest Force user in the Galaxy instead he ended up as burned brutal bastard who had to grovel to Sidious.
The darkside uses the enemies weakness against them, the lightside uses the enemies strengths against them.
