Personally, I think solid copper is a bit too niche. If you're a Michelin restaurant... great. If you want 1 copper saucepan for PERFECT temperature control... great. If you just like the look though, I would get clad copper, because solid copper reacts with your food pretty strongly for a daily use pan, AND you can't is it with induction if you need to. Clad works on induction though.
The problem is that they're perfect when you use a lot of oil. However for people watching their calories, using nonstick means we can use a limited amount of extra fat

The 4 pans i have had since before discovering triggs channel can back up everything he says about them, sponsored or not. @@MaxHaines-tm1vc They really aren't 'the best pans in the world'. All-Clad is more affordable and higher quality, and neither is a great pick for the average cook due to price. Carbon steel pans, particularly European made, are cheaper and just as good (if not better) for most cooks.

I work with high grade stainless steel pans at work, and I have Hexclad at home. I love the Hexclad pans. The demonstration in the video wasn’t very good and even seemed biased since it’s an ad. There’s pros and cons to all products. To anybody looking for new cookware I just want to say - don’t make a decision based on one UA-cam short.
@jtk56k they consider their Teflon coating peeling into your food normal wear and tear and wouldn't give me a new pan. I threw away an entire pot of rice after I noticed there was soo much of the coating peeling off into my food it was disgusting. Switched to stainless steel after that.

I like the whole trifecta. Cast iron for food where I need a consistent temp when cooking, like steak. Carbon steel for pretty much all my other cooking. And stainless steel for sauces and things I can't cook in a cast iron or carbon steel.
My parents got stainless steel pots and pans as wedding gifts over 30 years ago and they're still going strong minus the plastic handle grips. My brother and I have the pots that they never used (they have some duplicates) and I love cooking with them.
stainless steel is amazing for everyday use. when i invested in a quality one it was a game changer! a cast iron is still my goat for crepes and other not-so-everyday things
I learned to cook on stainless steel that was older than I am. I just moved out for college and bought my own set, and my mother is still using the same 25 year old cookware

I'd stay away from aluminium. It's a neurotoxin, and small particles will break off and get into the body. There's been papers on the leaching of aluminium in cooking, and it looks very dire for the metal.
@@dradriancicortas Dry it out. Wash the cast iron and put it on the stove to full dry it out before storing it. I usually coat it in a VERY light coat of oil after it's dry, then let it cool down and the store it.
This is why when my mom offered to buy me dishes for moving into my first non dorm place in college I specifically looked for the best price stainless steel available to us where we were. (Aafes surprisingly had a great option) I knew stainless steel was gonna last ages, and here I am in my mid 30s still using the same pots and pans from when I 19.
Cheaper is the set at target, they’re heavy bottom, really well made and we got some about 12 years ago and it still looks brand new after using almost every single day
I bought a carbon steel pan and a Dutch oven from a store that was closing. That 10” carbon steel is my new favourite pan. My whole family uses it now more then the non stick ones we have
@@GardenNomme i was a professional cook for very picky rich people dawg, not everyone wants a crispy fried egg that keeps the pan clean. Non-stick/cast iron stays cleaner for more uses like scrambled/Sunnyside eggs.
We have some ceramic coated pots and pans or somwthing and they're awesome. Nothing (and I mean nothing) sticks to them, easy to clean, dishwasher safe, and metal utensil safe.
I absolutely love that he held up Gordon Ramsay's Hex-Clad pan. Absolute garbage. And ramsay knows it. He doesnt use them things unless hes on camera. 😂
I've used hexclad for like 3 years, use metal spatulas or forks in them, cook with minimal oil with no sticking issues, and have cleaned them with steel wool just to see if they would damage, but they are awesome...so maybe they have changed but mine have been bullet proof.
Yeah, my family's been using the same couple cast iron pans since the 1890's. Not the only pans we use of course, but they do a lot of the heavy lifting. Seasoning them takes a few minutes a week, but they literally last forever. I'd recommend them to anyone who can lift them. They tend to go to the next generation as soon as arthritis sets in because they're heavy.
I found a stunning set of stainless steal pots and pans at a thrift store years ago and they have served me well. I do love my cast irons, they have a place on my kitchen. I have a ceramic non-stick. God I love that thing. It's truly non-stick, the only reason I add oil is because of the way it changes the flavor of the food.
I was about to fiercely defend pots and pans with ceramic coating. Those things are convenient, ridiculously easy to clean and doesn't suffer from the same problems as teflon, like flaking off parts of the coating!
@@yomeikounfortunately they do though, I'm on my second set. To be fair one of the pans chipping was entirely my fault, I left a few spaghetti strands behind that dried and pulled out chunks of ceramic when i tried to pull them off. But the rest of the set just started flaking from frequent use over 1-2 years i think. Its only the pans i used frequently that had a few chips though, the griddle from the first set is still almost exactly as it was brand new 5 years later, after maybe 40-50 uses. I love the ceramic sets though. I should probably find a better brand next time.

My mom actually gave me her old set after mine got messed up and hers were still like new and she did use the dishwasher. Plus she bought her set a year before she bought mine. @@MrAnnoyingYouBadly maybe it’s the soap you use? Or have you been using metal utensils because I would only use wood or plastic spatulas. Maybe try cleaning them right away as well. That way the old food doesn’t get a chance to sit on the pan and somehow mess it up. I clean them with dawn dish soap, a rag, and warm water. Don’t use steel wool or any harsh scrubbers obviously.

I would argue that a good nonstick pan is worth keeping around for things like eggs and fish. Both are very delicate and very sticky, so Teflon can make cooking them substantially easier. Also the primary reason we cook with oils is that they facilitate better heat transfer from the pan to the food not for lubrication.
Fully agree. But I would specify that the nonstick pan should be actually nonstick. Like fully nonstick. 100% Teflon. In my kitchen, it's better to have two pans that perform their jobs perfectly than 1 pan that compromises on both durability and non-stickiness. But that's just me.
Conceptually, I'm with you. I don't use teflon at all for anything. I use either my knockoff All-Clad ("Tramontina") pans or more recently, cast iron. Cast iron isn't dishwasher safe, but it's super easy to scour out and use again. Not only that, but you can safely use these pans with high heat. Not true with nonstick pans. You can pry my "sticky" pans from my cold dead hand.
I love how the only negative you had for non-stick was "if you need oil" which people don't. Non-stick pans don't need oil hence being non-stick. Meaning things don't stick to it
That's my point. Those pans are marketed as "nonstick" but they need oil. So they aren't actually nonstick pans. True nonstick pans (aka teflon or fully PTFE) don't need oil. Like you said.
Sometimes you just need a nonstick pan, sometimes you want a heavy pan that doesn’t cost $400 for searing. No one pan can do it all. I have all three. You can very easily clean cast iron with soap and a (NON STEEL WOOL) sponge without damaging the seasoning. You can use your nonstick for nonstick things like hassle free eggs and other very sticky foods, leading to a longer life overall. They’re also dishwasher safe but a breeze to hand wash. Stainless steel pans that are truly dishwasher safe cost an absolute fortune and if you cheap out you will be replacing it before the nonstick coating wears out if you use the dishwasher every time you use it.
I have put my stainless steel pan in the dishwasher every time and it is fine. I paid 120€ for two pans from de buyer. Perfect quality until now, 5 years later

Use enough oil and make sure the pan is hot enough before putting food in. Afterwards, you can soak anything stuck on the pan in water for a bit before cleaning it off.
Everything sticks if you don't pre-heat it enough. The thing is that it's a little tricky because I have accidentally started small fires for waiting too much for it to pre-heat. When you hit the right temp they work though. It's still scary for me now that I have had to put out two small fires, so handle with care. Maybe there's a right pre-heating technique out there, idk...
I recently saw a video where a guy put enough oil to coat the bottom in a cold pan, heated it for a few minutes dumped it and added more oil and it was non-stick. Idk if that'll work with stainless though, he was just using a random sauce pot as an example.
I have a stainless steel pan too because that IS the trend. No one ended up ever using it because of having to season the pan. Prepping ingredients to cook for 5 three times a day is enough work. We don't need to add prepping the pan to the list.

Its wild to me how many people think cast iron is that sensitive - I grew up with My Great Granddma who used cast iron EXCLUSIVELY and I never once heard her talking about regularly "seasoning" her pans. She just, ya know, cooked with them?
People have a lot of myths about them that make them a hassle. You can wash them as hard as you want how you want, just put a bit of oil on if you are worried about it after.
@@dradriancicortas the only thing you have to do to prevent rust is properly dry your cookware when you are done washing, do not machine wash these things. Use a scrubber all you want, they can take it, just dont try and scrub it "squeaky clean" - the cast iron absorbs alot of the carbonization of your food into the metal which will add to the "flavor" of your skillets over time. A properly "seasoned" skillet is one that has been cooked with over and over. Everytime you cook with it you are seasoning your pan!

I've got an set of stainless pans that I've had for at least 20 years. They were inexpensive, but are my favorite pans and whenever my wife suggests new pans, I ask why... Love my stainless pans!
Hestan lasts a lifetime and is naturally nonstick. Love the Nanobond man I’ve been using mine for 5+ years as often as everyday a week and it has zero scratches. Something I always boast about to myself but hey, I’m here now.
Lots of pans also seem to be made with nickel too. I recently purchased a set of stainless steel cookware by Homichef. They've been working great for me. No nickel. They were the cheapest non toxic set i could find on the market. I hesitated on my little cast iron pan because of how heavy these pans are but I'm so glad i bought it because i love it. Pancakes on cast iron come out perfect. I really wish these toxic pans weren't popular and sold by literally everyone. To me, they're just as scary as lead paint and we're just allowing them to be sold en masse.
The first items for the kitchen I bought were a sautier and a pan, stainless steel, from de Buyer and I loveeeee them for all of these reasons. My parents have nonstick pans and when I cook there I use normal pots to fry stuff because there’s no way
I use to think like this, then i got calphalon pans as a wedding gift, life changing, they are actually non-stick, and they do not get "dirty" to the point you have to scrub them, ever. a sponge and maybe 5 seconds of water removes everything from them. I have been using them for a decade now. They heat better, make clean up a thousand times easier, even if you have to clean them by hand, literally easier then prescrub then stick in the washer is just "rinse off and dry".
Idk I’m not a chef but I cook very avidly and I use the non stick pans my parents bought when I was born 18 years ago and they are great and are non stick enough for me still. Use whatever you have people!
I have a Hestan and all-clad stainless steel pans and they are my favorite. Once I learned how to Cooke with them, i decided I’d never go back to non-stick. I got the always pan as well and regret it every time I use it. It practically just sits in the cabinet all year.

He's still correct. Stainless steel is by far the best cookware. Doesn't matter what brand you buy it from. I got mine in a set from Walmart and it's amazing
My mom has a set of stainless steel pans for every kid that moves out. I'm so excited to get mine because you can literally do everything with them and they're perfect for college life!! Same with an air fryer, you can but the trays in the dishwasher too.
I have 4 cast iron pans. 2 are over 100 years old. My square was my Great Grandma's and she got it from her Aunt in 1930. It's slicker than any teflon pan. My big pan hasn't had a drop of soap touch it since before I graduated high school in 1990. They are far and away superior to stainless. The handles NEVER get loose.
In my opinion, it's because stainless is the next step for understanding how heat and technique affect your cooking. Most cooking UA-camrs are focused on helping their audience progress in the kitchen, and there is a ceiling on how well you can cook with most other cookware, whereas with stainless, there is only a floor. Personally, I am more interested in getting people to enter a world where there is no ceiling to how good their food and cooking experience can be. So I promote stainless. I'm not sure why others do, but those are MY reasons.

As someone who has used Heston cookware (I didn't buy it, it was owned by somebody else) I can vouch that they are DAMN good pans... BUT, you can find stainless steel pans at 95% of the same quality for 30% of the price
My dad always says that a cheap pan is better than an expensive pan. You ruin an expensive pan and you’re out a lot of money, but if you ruin a cheap pan, you just buy another one. I’ll stick to my cheap stainless steel pans. Edit: To clarify since I’m getting a lot of replies about this, I’m not saying that I personally have ruined my stainless steel pans as I know that it’s nearly impossible, I was just saying that if hypothetically it did somehow by some horrid twist of fate happen, it wouldn’t be a huge deal since I didn’t pay much for the pan. i’ve never had a full kitchen the last 5-6 years i’ve been renting, there’s been “kitchen space” but only 1 place ive lived in has had an actual stove. so i’ve gotten very used to using my portable induction cooktop. my dads friend, a good longtime friend of the family, gifted me a beautiful set of induction cookware when i first moved out. i still have all of them. oh and the place i lived that had a stove - induction stove top. so no need to buy new pots and pans, i just brought my old ones. they clean SO easy too, no scrubbing ever needed. induction over everything for me!
I tried your trick to make pans non stick but instead of steel i tried it with iron pans. Safe to say it worked like magic 😂 it acts better than a non stick one and the food tastes much better❤️❤️
I have a pretty comprehensive set of stainless and cast iron. Mostly cast iron, but I won't ever get a pan with any kind of coating ever again. Great vid.
Almost got some trendy pans but feel so much better with an enameled cast iron and stainless steel pan. Lucky its my 3rd set of pans (first were ceramic nonstick that lasted 3+ years, the nonstick pan i got to replace was not fantastic and gunked up quick, and now i have stainless steel) but they should hopefully last me the rest of my adult life. The main gamechanger for me was that if i wanted it to last i had to baby it... which meant i could never clean it good enough. No such issue with stainless steel

All I have are enameled steel and cast iron. My grandpa bought them in 1948 and they are still kicking.

I work with high grade stainless steel pans at work, and I have Hexclad at home. I love the Hexclad pans. The demonstration in the video wasn’t very good and even seemed biased since it’s an ad. There’s pros and cons to all products. To anybody looking for new cookware I just want to say - don’t make a decision based on one UA-cam short.

@jtk56k they consider their Teflon coating peeling into your food normal wear and tear and wouldn't give me a new pan. I threw away an entire pot of rice after I noticed there was soo much of the coating peeling off into my food it was disgusting. Switched to stainless steel after that.

I like the whole trifecta. Cast iron for food where I need a consistent temp when cooking, like steak. Carbon steel for pretty much all my other cooking. And stainless steel for sauces and things I can't cook in a cast iron or carbon steel.

My parents got stainless steel pots and pans as wedding gifts over 30 years ago and they're still going strong minus the plastic handle grips. My brother and I have the pots that they never used (they have some duplicates) and I love cooking with them.
stainless steel is amazing for everyday use. when i invested in a quality one it was a game changer! a cast iron is still my goat for crepes and other not-so-everyday things

I'd stay away from aluminium. It's a neurotoxin, and small particles will break off and get into the body. There's been papers on the leaching of aluminium in cooking, and it looks very dire for the metal.
I use a simple, classic black nonstick pan and have yet to encounter an issue in my several years of using it🤷♂️

@@dradriancicortas Dry it out. Wash the cast iron and put it on the stove to full dry it out before storing it. I usually coat it in a VERY light coat of oil after it's dry, then let it cool down and the store it.

My cast iron were old and well used when I was a kid, and Im 53 now. Pans are still like new and will for sure be handed down to my son someday.
We have some ceramic coated pots and pans or somwthing and they're awesome. Nothing (and I mean nothing) sticks to them, easy to clean, dishwasher safe, and metal utensil safe.
Never had a stainless steel pan until my father gift me one. Best give I have ever recived

I've used hexclad for like 3 years, use metal spatulas or forks in them, cook with minimal oil with no sticking issues, and have cleaned them with steel wool just to see if they would damage, but they are awesome...so maybe they have changed but mine have been bullet proof.

Yeah, my family's been using the same couple cast iron pans since the 1890's. Not the only pans we use of course, but they do a lot of the heavy lifting. Seasoning them takes a few minutes a week, but they literally last forever. I'd recommend them to anyone who can lift them. They tend to go to the next generation as soon as arthritis sets in because they're heavy.
I found a stunning set of stainless steal pots and pans at a thrift store years ago and they have served me well. I do love my cast irons, they have a place on my kitchen. God I love that thing. It's truly non-stick, the only reason I add oil is because of the way it changes the flavor of the food.
I was about to fiercely defend pots and pans with ceramic coating. Those things are convenient, ridiculously easy to clean and doesn't suffer from the same problems as teflon, like flaking off parts of the coating!

To be fair one of the pans chipping was entirely my fault, I left a few spaghetti strands behind that dried and pulled out chunks of ceramic when i tried to pull them off. But the rest of the set just started flaking from frequent use over 1-2 years i think. Its only the pans i used frequently that had a few chips though, the griddle from the first set is still almost exactly as it was brand new 5 years later, after maybe 40-50 uses. I love the ceramic sets though. I should probably find a better brand next time.

That way the old food doesn’t get a chance to sit on the pan and somehow mess it up. I clean them with dawn dish soap, a rag, and warm water. Don’t use steel wool or any harsh scrubbers obviously.

I would argue that a good nonstick pan is worth keeping around for things like eggs and fish. Both are very delicate and very sticky, so Teflon can make cooking them substantially easier. Also the primary reason we cook with oils is that they facilitate better heat transfer from the pan to the food not for lubrication.
Fully agree. But I would specify that the nonstick pan should be actually nonstick. Like fully nonstick. 100% Teflon. In my kitchen, it's better to have two pans that perform their jobs perfectly than 1 pan that compromises on both durability and non-stickiness. But that's just me.
Teflon exposes you to cancerous chemicals. Just another reason to throw it in the trash & learn how to cook with stainless steel or cast iron.

Conceptually, I'm with you. I don't use teflon at all for anything. I use either my knockoff All-Clad ("Tramontina") pans or more recently, cast iron. Cast iron isn't dishwasher safe, but it's super easy to scour out and use again.
Not only that, but you can safely use these pans with high heat. Not true with nonstick pans.

Sometimes you just need a nonstick pan, sometimes you want a heavy pan that doesn’t cost $400 for searing. No one pan can do it all.
I have all three.
You can very easily clean cast iron with soap and a (NON STEEL WOOL) sponge without damaging the seasoning.
You can use your nonstick for nonstick things like hassle free eggs and other very sticky foods, leading to a longer life overall. They’re also dishwasher safe but a breeze to hand wash.
Stainless steel pans that are truly dishwasher safe cost an absolute fortune and if you cheap out you will be replacing it before the nonstick coating wears out if you use the dishwasher every time you use it.
Be careful with nonstick. Apparently Teflon is terrible for our water systems

I love my full copper pans. Actually non stick, had them since 2017. It’s the ‘red copper pot’ line!
I wholeheartedly regret buying a stainless steel pan. *Everything* sticks. Obviously it can be mastered but it requires skill that I don't have.
Use enough oil and make sure the pan is hot enough before putting food in. Afterwards, you can soak anything stuck on the pan in water for a bit before cleaning it off.
Everything sticks if you don't pre-heat it enough. The thing is that it's a little tricky because I have accidentally started small fires for waiting too much for it to pre-heat. When you hit the right temp they work though. It's still scary for me now that I have had to put out two small fires, so handle with care. Maybe there's a right pre-heating technique out there, idk...
I recently saw a video where a guy put enough oil to coat the bottom in a cold pan, heated it for a few minutes dumped it and added more oil and it was non-stick. Idk if that'll work with stainless though, he was just using a random sauce pot as an example.
I have a stainless steel pan too because that IS the trend. No one ended up ever using it because of having to season the pan. Prepping ingredients to cook for 5 three times a day is enough work. We don't need to add prepping the pan to the list.

People have a lot of myths about them that make them a hassle. You can wash them as hard as you want how you want, just put a bit of oil on if you are worried about it after.
I have a cast iron but after it dries I can see rust in the buttom. Is that normal? I stopped using it because of that.
@@dradriancicortas the only thing you have to do to prevent rust is properly dry your cookware when you are done washing, do not machine wash these things. Use a scrubber all you want, they can take it, just dont try and scrub it "squeaky clean" - the cast iron absorbs alot of the carbonization of your food into the metal which will add to the "flavor" of your skillets over time. A properly "seasoned" skillet is one that has been cooked with over and over. Everytime you cook with it you are seasoning your pan!

Hestan lasts a lifetime and is naturally nonstick. Love the Nanobond man I’ve been using mine for 5+ years as often as everyday a week and it has zero scratches. Something I always boast about to myself but hey, I’m here now.
I have those Misen stainless steel pans. I just polished them with 2000 grit sandpaper to make them non stick.

Lots of pans also seem to be made with nickel too. I recently purchased a set of stainless steel cookware by Homichef. They've been working great for me. No nickel. They were the cheapest non toxic set i could find on the market. I hesitated on my little cast iron pan because of how heavy these pans are but I'm so glad i bought it because i love it. Pancakes on cast iron come out perfect.
I really wish these toxic pans weren't popular and sold by literally everyone. To me, they're just as scary as lead paint and we're just allowing them to be sold en masse.

I use to think like this, then i got calphalon pans as a wedding gift, life changing, they are actually non-stick, and they do not get "dirty" to the point you have to scrub them, ever. a sponge and maybe 5 seconds of water removes everything from them. I have been using them for a decade now. They heat better, make clean up a thousand times easier, even if you have to clean them by hand, literally easier then prescrub then stick in the washer is just "rinse off and dry".

I have a Hestan and all-clad stainless steel pans and they are my favorite. Once I learned how to Cooke with them, i decided I’d never go back to non-stick. I got the always pan as well and regret it every time I use it. It practically just sits in the cabinet all year.

Or just buy a cast iron skillet for like $20 and it will last until the sun explodes. The brand doesn't even matter, it's literally just a hunk of the most basic mass-produced metal you can find on the planet.

My mom has a set of stainless steel pans for every kid that moves out. I'm so excited to get mine because you can literally do everything with them and they're perfect for college life!! Same with an air fryer, you can but the trays in the dishwasher too.
I have 4 cast iron pans. 2 are over 100 years old. My square was my Great Grandma's and she got it from her Aunt in 1930. It's slicker than any teflon pan. My big pan hasn't had a drop of soap touch it since before I graduated high school in 1990. They are far and away superior to stainless. The handles NEVER get loose.
Remember to use butter instead of oil where possible folks. Much better as anti-stick and makes you food taste beautiful
Why do cooking UA-camrs goon over stainless steel? I prefer to not be forced to cook everything at insanely high temps just so the food doesnt stick.
In my opinion, it's because stainless is the next step for understanding how heat and technique affect your cooking. Most cooking UA-camrs are focused on helping their audience progress in the kitchen, and there is a ceiling on how well you can cook with most other cookware, whereas with stainless, there is only a floor. Personally, I am more interested in getting people to enter a world where there is no ceiling to how good their food and cooking experience can be. So I promote stainless. I'm not sure why others do, but those are MY reasons.

I would recommend Winco. That’s what we use at my restaurant, and they are very cheap.
You can get a 12" cast iron pan for $15 at ocean state job lot or a 10" pan for $10 at Aldi
Paderno is my go-to. Works great and is absolutely bulletproof. They also make the best vegetable peelers I've ever used.
Thank you - everyone I know is out there buying the “Always Pan” but I myself never fall into trends, so I’ve still been using my cast iron pots/pans and am just fine.

My dad always says that a cheap pan is better than an expensive pan. You ruin an expensive pan and you’re out a lot of money, but if you ruin a cheap pan, you just buy another one. I’ll stick to my cheap stainless steel pans.
Edit: To clarify since I’m getting a lot of replies about this, I’m not saying that I personally have ruined my stainless steel pans as I know that it’s nearly impossible, I was just saying that if hypothetically it did somehow by some horrid twist of fate happen, it wouldn’t be a huge deal since I didn’t pay much for the pan. Hope this clears things up :)

Mine have a thick bottom. Burned them so many times. Just soak in water, easy to clean. Had them for 20 years and they still look good.

i’ve never had a full kitchen the last 5-6 years i’ve been renting, there’s been “kitchen space” but only 1 place ive lived in has had an actual stove. so i’ve gotten very used to using my portable induction cooktop. my dads friend, a good longtime friend of the family, gifted me a beautiful set of induction cookware when i first moved out. i still have all of them. oh and the place i lived that had a stove - induction stove top. so no need to buy new pots and pans, i just brought my old ones. they clean SO easy too, no scrubbing ever needed. induction over everything for me!
I tried your trick to make pans non stick but instead of steel i tried it with iron pans. Safe to say it worked like magic 😂 it acts better than a non stick one and the food tastes much better❤️❤️
I have a pretty comprehensive set of stainless and cast iron. Mostly cast iron, but I won't ever get a pan with any kind of coating ever again. Great vid.
Almost got some trendy pans but feel so much better with an enameled cast iron and stainless steel pan.
Lucky its my 3rd set of pans
(first were ceramic nonstick that lasted 3+ years, the nonstick pan i got to replace was not fantastic and gunked up quick, and now i have stainless steel)
but they should hopefully last me the rest of my adult life.
The main gamechanger for me was that if i wanted it to last i had to baby it... which meant i could never clean it good enough. No such issue with stainless steel
