Hey Recky, we use half an onion dipped in a little oil to rub the grill grates so our meat doesn't stick and also flavor it. Also slice the other half of the onion, put in aluminum foil with butter, close it and let them caramelize while cooking the meat. Add those onions to your dogs or sausages and enjoy. Have you guys seen Chicago's neon relish??? It's great and unbelievably neon green

You have all those meat, pork and poutry rubs to try and not to mention all those sauces to put on them. I'm glad you are starting simple... Next up you should do some burgers and then when spring and summer comes, you can do the steaks and ribs as well.
Carol is correct as to the part where you do the wood. BUT also, the grate is there b/c you can also sit foil packets or smaller cooking dishes etc sides or w/e there to heat up/cook/get or keep warm, etc...
Hello Ricky and Carol.. just remember that BBQ Pitmasters are dedicated to make the best barbecue and have worked hard for many years. Trying and sometimes failing.Brisket for example can take up to 16 hours of slow smoking. So my point is. NEVER give up and keep on trying and trying because at first you may not be happy with the results. But do not give up. Keep up, continue, and learn and you will see success. Certainly Recky and Carol will have the BEST tasting BBQ in Sweden! That I can guarantee!
Now you have done your first cook on the grill. Grilling and smoking is not as bad as you think. Just don't over think what your doing, relax and have fun. My suggestion to you is what ever you decide to fix just get on you tube and ask how do I fix whatever and there will be many videos and people there to give you suggestions and tips. I been smoking for about 5 years now and I still watch tons of videos and read comments to learn different techniques and dishes. It is endless what you can do. And I love your grill/ smoker, I sure you will have years of enjoyment and great food with it.
Recky's American BBQ and Grill is starting up!! Nice. Perfect first go. It makes complete sense to get a feel for things with inexpensive meat first. Don't put a steak on there until you know how to cook a burger. Gas is just fine for burgers, sausages and veges. Gas grill gets to temp in a couple minutes whereas charcoal takes 20 minutes or so. With hot dogs, I find there isn't a whole lot of taste difference between charcoal and gas because they cook so fast. Now if you were offset cooking them, charcoal would have some time develop the char broil taste. Burgers for some reason can get the char broil taste even though they cook sometimes faster than sausages - maybe because the meat is porous? I don't know. But when I want a quick lunch I'll fire up the gas grill with no apologies. There are charcoal and wood people out there who won't touch gas. I personally think they both have their place in the grilling world. It is a matter of how much time you have, what you are cooking and experience. Since gas you can control very easily, learning to cook with that and controlling temperature you can use that knowledge when doing charcoal because at least you know what temp you are going for - controlling the temp of charcoal is a little harder because you use air flow and it is slower to respond. Of course smoking and offset cooking is a whole different animal. Just keep going on them. Respect it, but don't be afraid - experiment with cheaper cuts at first. This is exciting - can't wait to see the journey.

Grilling is great - we do it all the time! Even in winter! But you need to smoke some meat, too. You'll be amazed how many neighbors you never even knew become your best friends when you smoke a brisket for 10 hours.
Recky and Carol will be GRILL MASTERS in no time. I can see it now.....steak, chicken, lamb, pork or beef RIBS, seafood, veggies, pizza and all kinds of stuff on that grill!!!! If you can find it, get you some hickory, mesquite, or pecan wood pellets or wood chips from a home and garden store to create the smoke flavor. It takes your food to the next level. You all have a beautiful grill. Enjoy this new adventure!!!!

In really cold weather, you risk that warping. So, light it up, but warm it up slowly. They look great. I would have gone a bit longer because I love the char on the meat. That top rack is to put the buns on (opened) to warm them up. Or things that cook too quick, or to keep things warm. Costco had a great deal on Blackstone griddles this season. We all chipped in and bought it. While the eastern US is being pounded by freezing weather, it's been in the 40s and 50s in Montana. So, we put it together and it was missing screws. Blackstone sent us replacements. By the time we got the them temps started dropping. So, we still haven't made those cheesesteaks or stir fries.
Looks like Recky did everything correctly. Rotate the sausages to cook on all sides, move the under done sausages over the hot spots so they all cook evenly. As they become fully cooked you can move them to the un-lit side of the grill to keep them warm as the others finish.
Charcoal grill will give you better tasting food than the gas one. Gas is just way more convenient Also order a chimney starter to make grilling easier for the charcoal
Growing up in Connecticut, we would shovel the snow out to our grill before we shovel out our grill before the sidewalks and driveway! That could probably be a thing in Sweden as well!
Recky, don't be afraid of your grill. Open the valve on the propane tank all the way until it stops, then back off 1/4 turn, and use all three of the knobs for the burner. It's ok, I promise, you won't blow your house up🏡🤠

Use the upper shelf in your grill to warm the buns while the hotdogs are cooking, or butter and toast them on the grate with the hotdogs. Get everything in the house quickly, so it is warm to eat.
Just make sure you light the burners shortly after turning on the gas. You don't want a bunch of gas building up around you when you light it. If the burner doesn't light relatively quick, shut the knob off and let the excessive amount of gas dissipate before trying again..
I like to take bacon, fry it in a pan, use that grease to fry sliced onions and cabbage. Chop the bacon up and mix in after cooking, and top the hot dog with that
Carol - and Recki, you can actually cook burgers and things directly over the wood or charcoal on the far right. The center is for smoking meats, etc., and the far left is for cooking with gas instead of charcoal. Hope this helps!
Hey, that looked good! It’s hard to mess up grilling. It’s all personal preference too. Some people like to let their hot dog warm up beside the grill and people like me, like to char it till it splits. I like an all beef Frank that will split and get char on it, which is different than burnt. From looking at your grill, I’d say the left side is for propane, as you figured out, the middle is for smoking with indirect heat. The heat is coming from the firebox on the right, though it has a grate, so you can cook something like burgers or chicken directly over the coals, the way I would on my Weber kettle. So you got lots of options. Charcoal cooking tastes better than propane, but propane is quicker and easier. So just whatever that meal calls for. I don’t know if your regulators (the silver thing on the propane tank) are the same as ours, but we’ve had some problems in the last few years. If you open the tank too quickly, it seems to lock them up. The fix is to shut off the tank, open the knobs up on the grill for a few minutes, turn them off, open the tank valve slowly, , then light the grill normally. Smoking is a lot of fun. If you guys get into that, I highly recommend thermoworks. A professional brand that has accurate digital thermometers you can leave in. They tell you air temp and meat temp. Making Managment a breeze. I haven’t been doing it but a year or two and have people buying it from me. Not that I’m a pro, but if you have questions, I’m happy to answer them. A digital thermometer also makes you confident in not overcooking other things like pork chop and chicken. My mother loves the one I got her, now that’s she’s learned it. Before she would cook it bone dry, because she was scared of bacteria. Good luck, and I hope you guys get a lot of enjoyment out of it. Those are good heavy cooking greats. Keep oil on them and they’ll last a long time.
Excellent first step! Start small and simple, see how the equipment works, get some success under your belt, then move forward one step at a time! Next step, get some ground beef and make hamburgers. Patty them out yourself, add a bit of salt & pepper, grill them, add your toppings of choice. After that, maybe pork chops or chicken pieces. Finally, step your game up to smoking whole chickens, beef brisket, pork shoulder, whatever you want!
Butter and toast your buns on the grill too.
