Love your Klose Pitts smoker! Hey is your fire box 1/4" or 1/2"? Do you keep and maintain heat well with what you have? I am planning on getting a pipe smoker from Dave but not sure if I should upgrade the fire box. Nice job on the chicken also.
Thank you! That is an excellent question. My pit has the 1/2” firebox option and I cannot think of any reason you would not want this option. I cook in both hot (90 plus) and cold (0-20 degrees). Definitely upgrade to the 1/2” firebox. My pit maintains a consistent temp and it also burns very little wood over the course of each cook. In the near future I will do a one year review of the pit, my thoughts, and the options I decided on. Let me know if you have any further questions.
I want to add that I believe BBQ Pits by Klose is one of the only (if not the very few) manufacturers that do a lid on top of the 1/2” firebox for what its worth. I originally didn’t think I wanted this option on my pit but I got it anyway. Now that I have it I use it all the time for steaks and other direct grilling. Its convenient to cook smaller items without firing up the large cooking chamber.
