    Could you use a lower attenuating yeast to retain some sweetness? Do one with Windsor...

      I'm thinking of doing it again but either using SafCider AB-1 or AS-2 as both would leave a bit more sugars behind to allow for either a more balanced cider or even a hint on the sweeter side in regards to the AS-2
