Honey is a good substitute for sugar. And coconut sugar too.

This is very similar to a recipe my family enjoys during holidays, but it is a wonderful side dish for any meal. We call is corn relish but in addition to the shoepeg corn, our recipe calls for 1 can of tiny peas drained and 1 can of French green beans drained. We boil the vinegar, sugar, salt, pepper and oil to help it dissolve. Everything else is very similar as it calls for 1 can of shoepeg corn, pimento, celery, and onion. You might give it a try and see if you like it sometime. I'd be glad to share the recipe if you want exact measurements. 👩‍🍳

If you'd like me to send you recipe, I'd be glad to do that. We love it so much, I make a double batch so we have plenty for Thanksgiving and Christmas. It stores well in refrigerator.
