This is very similar to a recipe my family enjoys during holidays, but it is a wonderful side dish for any meal. We call is corn relish but in addition to the shoepeg corn, our recipe calls for 1 can of tiny peas drained and 1 can of French green beans drained. We boil the vinegar, sugar, salt, pepper and oil to help it dissolve. Everything else is very similar as it calls for 1 can of shoepeg corn, pimento, celery, and onion.
