"If the pan isn't hot enough minced meat will boil and turn grey"
Did not know this, thanks. I always keep the pan low/medium to reduce splatter but run into that boiling problem.

There are net lids that you can use. It prevents splattering but doesn’t dry out the meat

If you have a non-stick pan you can make it hot and throw the mince in without any oil/butter. No splatter, nice browning and you'll fry the mince in its own fat.

There are screen type lids that prevents spattering and your meat will still brown beautifully. Great with bacon too.

I'm not sure if someone from your team reads these comments, but could you make a video, where you showcase a "normal 2-4 person household weekly shopping cart and how you utilise all the groceries for a week worth of food" or just like 2-3 days? It's so hard to follow recipes, since I often don't have the amount needed or if I shop for the ingredients I get way too much (since one can realistically only buy bigger bunches if you don't want to throw your money out of the window) and have to throw some of them away or just don't know what to do with the rest of it

I made the first one. It was one of the best things I’ve ever tasted. I am an amateur so maybe this was bad but I couldn’t find minced pork so I used 85/15 ground beef instead. And couldn’t find those chilis so I used habanero. Followed everything else per Gordon’s instruction and I was blown away by the variety of flavors. So good. Thanks Gordon. My lips are on fire but I’m happy! 😂

I respect your blunt honesty. Love your meat dishes; At least the ones that I can afford, being on a fixed income. (Disability Support Pension.) But... I really have yet to come across anything vegetarian or vegan here that entices me - let alone excites me. I would never consider myself a chef, not having been to a Culinary College, but have run pub kitchens, worked as the cook in a private hospital, and also worked as the Vegetarian cook at the University of South Australia, where I learned that most vegetarians (students anyhow,) will eat any kind of shite as long as it is smothered in cheese and grilled. Ugh! I know that your taste lies heavily towards carnivorous, but just quietly, there are fabulous vego/vegan recipes about that you could put your own twist on. Can't go wrong with basic Middle Eastern seasonings and combinations. Oh hark at me, bringing coals to Newcastle! All the best... Don't stop, ever...
