    The book I referenced in the video is The Secret of cooking by Bee Wilson

    This Risotto recipe is basically:
    1 cup arborio rice, 4 cloves garlic, 1/2 purple onion, 1/2 cup dry white wine. For the broth I mixed about 2 tbsp miso, a splash of soy sauce, a splash of fish sauce, a splash of mirin, 4 cups of water. Add the broth about 1/2 cup at a time, stirring constantly until absorbed. Once all the broth is absorbed, add 2 tbsp gochujang, 2 tbsp butter, 1/2 cup parmesan, salt to taste.
    You can top this with any protein or just enjoy it alone. I regretted the sesame oil a bit as it has a tendency to overpower.

    The way you described the book is the way my mother taught me how to cook. "Here are the rules, here's why they work... now go experiment, and do what you like."     This is a beautiful video. I love to cook and feel that I’m decent at it but have never felt creative. This video has inspired me to work on that…thanks. I too, eat a lot of pizza BUT I make my own. There’s my first creative step😂

      That makes me so happy! I think spending a little time getting some base recipes and flavors down makes all the difference. And homemade pizza definitely counts🥰

    I love this story, but the end was my favorite part. Even if you just jave 1 ingredient, make it the best 1 ingredient dish that you can, bravo! 🥰 That alone is inspiring if you ask me! I love your channel! 😘

    This is from such a cool video! I love how you're not like putting on an act or being influencer-y. It's just like a calm really like "human baseline" sort of vid. So awesome!
    I make mushroom riscotto all the time because of how easy the stock is to make! I want to try this

      You should definitely try it, Gochujang is one of my favorites but you can do virtually any flavor!

      If you haven't had a vermicelli bowl it's like one of my favorite meals.
      NUOC CHAM:
      1/2 cup sugar,
      1/2 cups fish sauce, 1 cup of water, one full lime worth of lime juice - maybe a half lime based on taste, 2 chopped garlic cloves.
      Use a bit of that sauce as the marinade for a protein(fish/pork)(DO NOT REUSE/CROSS CONTAMINATE💀, fry the protein in canola/peanut oil(pat dry).
      Boil some rice noodles I use mung bean or now kongmoon noodles, boil for 3 min and 30 sec then strain. (Or don't boil make noodles how you need to)
      Add nuoc cham sauce, (I prob don't have to write this but don't reuse any of the marinade nuoc cham, add clean, fresh stuff to your bowl) add noodles, cucumbers, iceberg lettuce, chopped peanuts, the protein and it's done!!
      ^ I like asian food, this and dim sum for me 🥰🥰🥰

    can you share please the pan that are you using? is it a carbon steel or stainless steel pan? thank you for sharing. yes I also love pan bagnat but I want to learn to make risotto.

      They are copper pans, but I think the inside is stainless steel.
