Another one I think was missed was Mob Psycho 100! The anime is soooo much better than the manga. Not that the story itself wasn't good--coming from an avid manga read versus anime watcher--because I love the story in itself, but Studio Bones did a PHENOMENAL job with the animation I just couldn't take my eyes off it or get enough of it. They took such a refreshing a creative approach that I just loved. They interpreted the scenes and emotions and developed the source material and art style (aka Reigen) sooo well that it still felt so genuine to the original craft that One created. You also can't tell me that Mob Choir aren't geniuses when it came to the soundtrack. I had that soundtrack on loop for weeksss. They couldn't have adapted it any better, in my opinion.

From what Shuhei Morita (the director of Tokyo Ghoul S1 and S2) said in a Reddit AMA, Ishida only wrote the draft for Root A and gave it to Morita, but apparently a lot of the things in that draft were changed because of the "people up above".
So Tokyo Ghoul is another example of having very competent people working on it but getting screwed royally by a production comittee.

My counter argument to "Mikasa was one dimensional in the anime" has always been that in S4 her newfound maturity is more noticeable and satisfying to witness.
It's similar to Floch's character shift when he goes from a coward at the end of S3 to a facist extremist and I've always been fond of that type of character arc.

about manga vs anime I tend to think better about the manga not because is a "superior medium" or for better static drawings but because sometimes the mangaka is the best among the best, Horikoshi, Tabata, Oda, Makoto Yukimura are all monsters, to better than a great manga you need to be great adaptaton, not just normal, but there are few animes that gain this tratament.

The manga is able to incorporate a ton of detail for specific panels or short bursts at it is infinitely easier and less time consuming to detail the living hell out of a character for an arc or two (See Vigilante Deku) rather than to animate that. While you can get to a comparable level, it is difficult regardless to keep that level of detail. Now some shows do make a scene look worse with lackluster animation or detail. (See Drawf Form Charmy and her wolf form in Black Clover)

I think they are different media that have resources to be used in both, nowadays we are in time to have more adaptations in anime even if it remains very faithful to the original, Chainsaw Man is kind of the story of the manga without taking away but with its own tone adapting the tone of the manga otherwise something that bothered a crowd who expected something in the style of Mob Psycho.
I can't blame those who want manga with movement, don't want changes, because that's how this industry worked for a long time the anime served to sell the manga, today I see something very different, which is the animators wanting to make a product that validates itself a bad result in the media will give this impression of the manga being superior and here comes the point that annoys me, which is when they say that an anime is better than a manga because the mangaka have a more stylized and simplified style I think that when aesthetics become a reason for superiority, the discussion tires me.

Oof haven’t watched it since s1 came out so some points I can’t remember specific examples of, but lemme see what I can remember. The anime definitely has beautiful art and animation, especially in the first episode, and I really love and appreciate that part of it! But, (and I recognize this is a really personal thing) in some ways the anime feels too tied to the manga for it to really be its own thing. I always get annoyed when an anime adaptation tries to translate things that work in manga into anime without adapting it to the medium. Lots of parts where in the manga there’s a text box that explains something, the anime will have the exact same textbox, which I find unnecessary in the anime. Sometimes it’ll explain something in the manga that we can’t see because it’s still, but it’s kept in the anime, even when we can already clearly see the character do what the box is saying. Also, a text box like this works a lot better in manga where you can stop and read it, unlike anime, where you can’t take your time with it. The text boxes are essential to the tone and style of the mana, give the manga a very distinct charm that works really well for it, and give it a lot of its character. I just don’t think it’s as charming when it’s in the medium of anime since it doesn’t feel like it was made to be in an anime. The same charm can be achieved by the great art and timing and animation, and a lot of the time it does use those things, but it still leans on it like a crutch, which is really distracting for me. When I’m watching, I’m constantly being reminded that it’s an adaptation instead of being able to be sucked into it as its own thing (I’m realizing as I write this that this might be a me problem). I like when adaptations that take the source material and make it feel like it was made for the medium its being adapted into instead of holding on to parts of the source material that don’t translate. I admit that a lot of parts definitely adapted the jokes of the manga really well. But I was still constantly distracted by the ones that I could tell were made for the medium of manga. I feel like that happens a lot in slice of life/ romcoms especially, like Horimiya too. I still really enjoy parts of it and am glad I watched/read both, but the manga felt like it was the more natural medium for it to me. But I definitely see what there is to appreciate about the anime, I can’t disagree with the show looking great.
