Homemade Lamb Shawarma / شاورما لحم

  • You don't need a vertical spit roast grill if you can slow cook the lamb till it's falling off the bone tender. Calling Shawarma street food slightly diminishes how delicious it is. It is a serious cooking adventure with a an amazing ending !!!!

    Ingredients:
    1 bone-in lamb shoulder blade, about 4½ lbs / 2 kg
    Fresh spices:
    2 tsp black peppercorns
    5 cloves
    5 cardamom pods
    ¼ tsp fenugreek seeds
    1 tsp fennel seeds
    1 tbsp cumin seeds
    1 star anise
    Small cinnamon stick
    Dry spices:
    2½ tsp sea salt
    1 tbsp sweet paprika
    1 tbsp sumac
    ½ whole nutmeg, grated
    The rest:
    25 g / 1 oz fresh ginger, grated
    4 cloves garlic, crushed
    40 g / ⅔ cup chopped cilantro, stems and leaves
    60 ml / ¼ cup freshly squeezed lemon juice
    120 ml / ½ cup Olive oil
    360 ml / 1.5 cup boiling water
    Tahini Cream:
    ¼ tsp salt
    150 g / ⅔ cup light tahini paste
    120 ml / ½ cup water
    2 tbsp freshly squeezed lemon juice
    1 medium clove garlic, crushed
    Tomato, cucumber Salad:
    1/8 tsp salt
    1/8 tsp pepper
    1/8 garlic powder
    150 g / ⅔ cup Tomatoes
    150 g / ⅔ cup Cucumbers
    ½ tsp Lemon Juice
    1 tbsp Olive oil
    Pinch of parsley
    Other garnish:
    Pickled Turnip (Kabees el lift)
    Olives
    Fries
    Chopped parsley
    Pickled onions.
    Pickled Chilis.

    For your cinnamon stick, do you prefer Ceylon cinnamon or cassia (or no preference)?

    Great video , is there a fattier cut of lamb that can be used for this meal ?

      The shoulder and the leg are the fattiest cuts of the lamb, with the most amount of meat to bone. I would go for the leg but I prefer the shoulder. 😊

    Great stuff currently cooking it now, just a quick question why you leaving it uncovered for 30 minute's.

      Because you can’t really sear it since it’s too big, I let it cook without cover for 30 minutes so that the spices “sear” to the surface of the meat. I hope that helps. Enjoy your shawarma 😄

    Will this recipe be okay if I omit the ginger? My husband is allergic.

      It will be good still. You will lose some of the aroma but you should be fine. The recipe has lots of other spices and herbs. Give it a try and let me know what you think.

    How does it smell after you marinate? What type of smell should I look for?

      It will be a strong lemon juice, cilantro, ginger, and spices. It will smell good from the get go !

      As every true Moroccan, the lack of bread is a BIG problem. You need to have bread for two days at least, always 😄.

      Difficult question. It’s very close to an authentic Lebanese shawarma but I wouldn’t call it that. It has the spices, the kabees, the tahini cream…very close 😊. Are you Lebanese ?

    Ok I love cilantro and so does my wife. Now to answer why some people dont, we actually had this discussion about this years ago when her godfather was known to hating it. There is a genetic component where some people taste it and it taste like soap to them. But their loss! Cilantros awesome. Makes great chutney too.

    Because cilantro tastes like metallic soap... And it's not like it's slightly disgusting it's overwhelmingly disgusting to those of us who hate cilantro.
    The smell and taste is offensive to me. Imagine squirting dish soap and grating copper over your food and eating it. That's what it is like when cilantro infests your food.

Hahaha but since I genetically can't its funnier to hate on it in a hyperbolic way 😂 but truffles are rough they need to be used very subtly to be good haha. I wonder if you like olives?

      @@Theogvineofthedead For me truffle is if someone opened a propane tank and douzed my food with it.i like olives, I mostly enjoy olive oil though ! Cilantro is a rough one. If you are not genetically wired to hate it it adds a lot of flavor. How do you feel out parsley ?

      @@KuzinaWithSimo parsley is fine and yeah I totally understand that with truffles it's so strong. There is apparently a gene in a small portion of people who are sensitive to th soap like chemicals in cilantro so it's just different.
      But what's more important is how amazing Lamb shawarma is. 😂 I miss living out west I was always able to easily get Arabic shawarma anywhere but here in Tennessee their ain't shit. So I have to make some at home and honestly I feel like I should open up a shop in my small town. ❤️

      You should try this recipe (minus the cilantro). It’s crazy good. I would totally find a good lamb farm and start a restaurant next to it. Small menu, small
      venue but great food and service !!!
