What happens to the pans of leftover sauce, if there was cooked too much, as it happens at the beginning here? - And aren't the splashes just a mess to clean later? ^^'
    Looking tasty though, rrrh!

If it's a really spicy sauce, usually we discard it in the waste. But sometimes we collect the sauce altogether and staff use it as a dipping sauce for their snacks. It may sound gross, but the sauces are full of different flavours and it goes well with dipping breads or papadums 🙂

@@ayechef Why gross? I'd love to have extra sauces as leftovers! 😄

What kind of cuisine is this? Never seen so much dairy in my life

This is Indian/ Nepalese cuisine (South Asian) but with a slight difference to cater the locals. If you go to the regions in India or Nepal, they don't use dairy like this 🙂

Yeah you lost me when you cut out getting the bajhi out of the microwave dry as anything only minutes in.
Your standards are spot on but the food looks dry and boring. 0:57

It's takes minutes to cook a bajhi in hot oil fresh.

I heated up rice in the microwave and cut to the part where we took out the onion bhajis from the fryer behind us. They may look dry on video but I can assure you that they are moist and crispy. We only use the microwave to heat up rice. I'll be uploading how we make the starters and tandoori dishes in the near future 🙂
