Double the hatch frame for support. Face nail and end nail it good. measure where the waste pipe comes down and mark it on the foundation inside and on the breezeway side, so you don't put a nail in it. All so that electric run that goes behind the pipe mark that too.

MaCon! I am putting my money on you guys getting it done! After all the drama with the well I really do think you all deserve a break! One observation I have is you all really should encourage and allow your son to participate in the narration of your off grid home project! I say this primarily because watching you all remind me of when my brothers and I were probably a couple of years younger than your son mt brothers and I worked with our Dad and what a joy! Our Dad was literally a jack of all trades and a master of every one; I.E; carpenter, brick mason, plumber and electrician! Later in life believe me these will be some awesome memories for your son not to mention for your grandchildren to actually see of their dad working with and learning from their Grandma and Granddad!

I tried to add comment to broken foundation video but something went wrong and it wouldn't let me.
Just wanted to let you I like watching your videos.
One fix for top of wall would be to make lower level line and cup grind down. Then you can just double your sill plate. Second fix which would be less work is just anchor a small from board back to each side. Then pick up a bag of high strength repair mortar and trowel it on top of wall flush to form boards.
Keep up the good work. Mistakes happen, some easy to fix and some not so easy.

Insulation no-no. The paper side of the insulation (if there is one) goes toward the living space. IF it were me putting insulation in that floor space , I would be using unfaced batts as deep as the floor joists are. Holding it up in place would chicken wire that is stapled to the under side of the floor joists. Keep up the hard work & stay safe
