So about 7 years ago almost to this day I was working for a quaint little breakfast nook in Boston, MA I had been there for about 2 years and they let me change the menu after about a month of being there and I always changed it at least every two months and we were always super popular and packed from open to close.. one morning my boss came to me and said hey we have a celebrity in at the juice bar and he wants to order some food can you work the ticket for me (my shift hadn't started yet.) obviously I jumped right to work not knowing who it was I just wanted to make an impression on whoever it was it didnt matter.. they had ordered an irish eggs benedict and a few other things. about 20 minutes after the food went out my boss comes back and had my co worker take over my station and asked me to come out and meet our celebrity I turned the corner and there he was Gordon Ramsay I was blown away! I was thinking to myself there is no way I am on kitchen nightmares we are doing fantastic here, and I had assumed right, Gordon looked at me and shook my hand and introduced himself and said " I had to meet you, this fucking hollandaise is delicious not to mention the hash, did you make this from scratch?" I proceeded to tell him " Yes chef, everything is made from scratch the corned beef is prepared in house and I even smoke it for 36 hours even though its unorthodox I feel it gives it a flavor you're never gonna get by just baking or boiling it." Gordon then proceeds to wipe his plate clean with his toast {a homemade farmers bread that was lightly buttered with locally sourced with Amish rolled butter. "Absolutly delicious!" he exclaimed He had given me such high praise and tried to tip me $100 and I told him he gave me something so much better than a tip and I asked him to sign my Damascus steel chefs knife which he did. It was such a great experience and he kept coming back very often and one day he asked me if I'd like to come work for him which I had to turn down because I was actually finishing up school and moving back home but he insisted before I went home to come to his restaurant in CT. and gave me a hand written gift certificate. I was so busy the next couple years I never made it, instead I framed his gift certificate as a memento of one of the best days of my career. So about 2 years ago now we went on a road trip and I decided to travel a bit out of the way and visit Hell's Kitchen, Luckily he was there and even better he remembered me even by name, I can't tell you how good that felt and from that day on we have been close enough friends to even chat from time to time and he is a great guy!

To be honest as much as I think change is good he could’ve kept it a tropical theme, but made it better and less tacky. I sometimes feel bad when these restaurants get a whole different revamp because a lot of them had unique looks and styles that made them stand out. Cus I know there’s ways to impress customers while also doing it for yourself.

There's a lot of things that go into design that are nuanced, and of course it depends on a myriad of factors like location and community and whatnot. One of the reasons why I went out of the cooperate material design and went more into another field of design is because I actively had to work on businesses that were setting themselves up for failure, due to trends. You would have a brand new passionate clothing store, located in an active location with a myriad of other clothing stores (that already got their name). The company would actively push and design according to trends and material design. The result was the same clothing store that had similar identity as those beside it, that barely anyone visited, and a business owner that didn't know why things went as wrong as it did. However, when I left that field, I just came back to him (as I felt bad), helped him out forging an unique identity, and the shop standed out and got customers. Still thriving years later, you would not believe the satisfaction I have being part of that succes. That's the moment where it solidified that protocols and rules aren't to be taken literally for a field as vague as this. Instead, protocols are to be respected, not followed. That's challenging, but its the respect your clients deserve when you're a designer.

I hate globohomo or calarts in design, it takes all of the joy and creativity and makes it bland and an attempt to be "hip". You don't have to modernize everything anyways, some outdated restaurants are still running, for example Lamberts Cafe in Missouri, it's outdated as hell but it still thrives. As long as it's unique and well designed it can pass well

So about 7 years ago almost to this day I was working for a quaint little breakfast nook in Boston, MA I had been there for about 2 years and they let me change the menu after about a month of being there and I always changed it at least every two months and we were always super popular and packed from open to close.. one morning my boss came to me and said hey we have a celebrity in at the juice bar and he wants to order some food can you work the ticket for me (my shift hadn't started yet.) obviously I jumped right to work not knowing who it was I just wanted to make an impression on whoever it was it didnt matter.. they had ordered an irish eggs benedict and a few other things. about 20 minutes after the food went out my boss comes back and had my co worker take over my station and asked me to come out and meet our celebrity I turned the corner and there he was Gordon Ramsay I was blown away! I was thinking to myself there is no way I am on kitchen nightmares we are doing fantastic here, and I had assumed right, Gordon looked at me and shook my hand and introduced himself and said " I had to meet you, this fucking hollandaise is delicious not to mention the hash, did you make this from scratch?" I proceeded to tell him " Yes chef, everything is made from scratch the corned beef is prepared in house and I even smoke it for 36 hours even though its unorthodox I feel it gives it a flavor you're never gonna get by just baking or boiling it." Gordon then proceeds to wipe his plate clean with his toast {a homemade farmers bread that was lightly buttered with locally sourced with Amish rolled butter. "Absolutly delicious!" he exclaimed He had given me such high praise and tried to tip me $100 and I told him he gave me something so much better than a tip and I asked him to sign my Damascus steel chefs knife which he did. It was such a great experience and he kept coming back very often and one day he asked me if I'd like to come work for him which I had to turn down because I was actually finishing up school and moving back home but he insisted before I went home to come to his restaurant in CT. and gave me a hand written gift certificate. I was so busy the next couple years I never made it, instead I framed his gift certificate as a memento of one of the best days of my career. So about 2 years ago now we went on a road trip and I decided to travel a bit out of the way and visit Hell's Kitchen, Luckily he was there and even better he remembered me even by name, I can't tell you how good that felt and from that day on we have been close enough friends to even chat from time to time and he is a great guy!

@@DanielDorn-tr7tw To be fair the owners themselves were not chefs, I was also hired as the head chefs assistant, but what got me the most respect was the specials I put out and how well they did. That opportunity really did help me blossom into my career as an executive chef and I have since helped design menus and open dozens of restaurants across New England, I also own two food trucks which are my main focus right now.

To be honest as much as I think change is good he could’ve kept it a tropical theme, but made it better and less tacky.
I sometimes feel bad when these restaurants get a whole different revamp because a lot of them had unique looks and styles that made them stand out. Cus I know there’s ways to impress customers while also doing it for yourself.

There's a lot of things that go into design that are nuanced, and of course it depends on a myriad of factors like location and community and whatnot.
One of the reasons why I went out of the cooperate material design and went more into another field of design is because I actively had to work on businesses that were setting themselves up for failure, due to trends.
You would have a brand new passionate clothing store, located in an active location with a myriad of other clothing stores (that already got their name). The company would actively push and design according to trends and material design.
The result was the same clothing store that had similar identity as those beside it, that barely anyone visited, and a business owner that didn't know why things went as wrong as it did.
However, when I left that field, I just came back to him (as I felt bad), helped him out forging an unique identity, and the shop standed out and got customers. Still thriving years later, you would not believe the satisfaction I have being part of that succes.
That's the moment where it solidified that protocols and rules aren't to be taken literally for a field as vague as this. Instead, protocols are to be respected, not followed. That's challenging, but its the respect your clients deserve when you're a designer.

I hate globohomo or calarts in design, it takes all of the joy and creativity and makes it bland and an attempt to be "hip". You don't have to modernize everything anyways, some outdated restaurants are still running, for example Lamberts Cafe in Missouri, it's outdated as hell but it still thrives. As long as it's unique and well designed it can pass well
