I watched the Mozzarella part of the video a few times to get the proportions. I had to estimate the amount of rice as Ami did not say the volume, but looked like about a cup to me. Broccoli Mum’s Low Fat Mozzarella 1 cup Rice 1 teaspoon Salt 1 teaspoon Lactic Acid 2 teaspoons Kappa Carrageenan 3 tablespoons Nutritional Yeast 3 Tablespoons of Tapioca Starch 1 tablespoon Apple Cider Vinegar 1 cup Potatoes 1 cup Soy Milk Blend. Heat in pan till cheese consistency.

The tips about making the food anyway is very true. I prep my spring mix into mason jars, dice my veggies and put into mason jars as well, if I do not do this, I would not be eating as many salads and veggies as I currently am.

Hi Ami, I get so inspired by your videos - and I've been vegan for over 10 years! I finally made the mozzarella cheese and it turned out so good. I didn't exactly use your ingredients because I didn't have lactic acid or capa caradine - BUT, I did have Sour Starch. Firmed up nicely, tastes really good, shreds and melts. Thank you for the inspiration!
OOOh, Ami doing a lower fat plant based cheese series….taking all of your vegan cheese knowledge and then just tweaking to remove any oils, don’t mind the nuts especially if they are fermented/cultured I just don’t want any oils/coconut oils in them. Woo-Hoo that would be brilliant!

I’m an Aussie and have never seen a plantain. But I think Ami said once, that she tosses her plantains in the microwave for 6 mins and they’re then squidgy hot and yum. And if not…then bung it back in for another couple minutes.😬
I have questions on kappa carrageenan. From what I’ve understood, that ingredient can cause inflammation and also cancer/tumors. Its the ingredient in some plant milks that people steer clear of. Is kappa carrageenan the same? I think Greger has a video on it. Have you heard of any of this?

Have you ever used glutinous rice? Theres a traditional product called Mochi which is just made from pounded glutinous rice. It ends up as this sticky, chewy stretchy goo. I've been thinking for yeah it could be used to make an interesting fat free cheese alternative. When you grill it it even sort of melts and goes bubbly.
Oh My, this Plantain thing looks SO good! Did you warm it up in the microwave first? Cook it, or just heat it up? While still in it's peel? I've never had one before, but I just checked, looks like my grocery store here in Northern Minnesota, USA, does have it. SO I'm going to try this!!! Just curious how to actually use it tho.
How do you eat all this and not be severely bloated. I love veggies and beans and have to stop myself from eating them because I get bad bloating and pain always...any issues yourself?
Hard to get that Mozzarella that holds a shape. I've tried three times on my cheese still don't have it right. It's potato, rice agar powder, tapioca starch, small amount of cashews. It's almost there, the flavor though is fantastic. I do have a regular mozzarella that's really low fat, whole foods vegan and sooo good. I'll get the recipe and post if you wanna try it

I'm not understanding the difference between plantains and bananas as far as taste goes. Never had plantains yet. But I see them at the store.
