I watched the video again, you use some mantis key techniques as well ^^ some of the chokes, the joint locks and the technique when you hook behind his head and pull away the leg.... do you have a mantis background? I found out that the pull the leg away technique works much better when you grab him inside the ellbow while the leg on the same side is the front leg. That could be interesting for your grapple mode... "grapple mode on--> go under his arm and grab from inside the crook of his arm then you pull away his front leg in the one direction and his arm in the other"
I don't think he is using mantis techniques, its more like mantis and wing chun have some similar techniques, perhaps they were derived from some of the same sources.
