Make Port aka Fortified Wine One Bottle at a Time! Elderberry Port, Yes Please!

  • I love a glass of port at night or when serving appetizers and wanted to make my own. I didn’t want a huge batch so I learned how to make it one bottle at a time. Today I’m making elderberry port which is so tasty! Here’s the recipe;
    One bottle wine (elderberry if you like)
    1 cup 40% brandy
    1/2 cup honey or 2/3 cup sugar
    2 drops liquid smoke (optional)

    I like your recipe. I adjusted it by adding some French oak chips to half a cup of vodka, when the colour turned amber after a day or two, I then added the liquid to the brandy, which was added to the wine/honey mix. The wine was originally a sweet Chilean red wine. It resulted in a mildly oaky ruby style port. Quite impressive. Thanks for the video. I'm now experimenting with French oak in the wine/honey/brandy mix. Also, I used a French Brandy called Bardinet which is very mild and smooth even thought it's 40%.

    what kind of "sulfites" would you add if you wanted to age it for a month or so?

    Very interesting, I've never known how port is made. Regarding the upcoming planting season, I'm a total beginner at gardening but I want to try my hand with one or two vegetables this spring. I live in NH, so probably a similar climate to you. Do you have any recommendations for easy-ish vegetables to get started in early spring?

      You have lots of options depending on what it is that your family likes to eat. Some things I have already started indoors like; kale, bok choi, kohlrabi, and fennel. Theses can go outdoors probably about two weeks before the last frost date in your area. I am planning on using a low tunnel to get them in sooner. The ones you can plant early directly in the ground would be the same ones as above but also peas (sweet and shell), radish, spinach, lettuce, beets and carrots. They can be planted about 2-4 weeks before your last frost date. You can plant other things but these are easier to grow. I wouldn't try things like cabbage, broccoli or cauliflower because they can be a bit harder for the novice! Good luck!
