For humidity value till 37 was possible with water on induction stove but if I need 55 for a room is there a solution

Oh no it's not problem it's mean ur incubator working properly bcz 1209 controller turn off the bulb automatically when temperature reached at37.8 and on at 37.6

This is a terrible idea and risk shock or death of the birds. You need to build a forced air chamber and in that chamber place your water. You can build the chamber out of foam panels and 12vdc fans. it will work perfectly and help circulate the air of the incubator at the same time.
