    You have to soak the field beans in water overnight. The next day morning, remove the skin by holding a bean between the thumb and index finger and sliding the skin of the bean gently
    backwards, so the bean pops out.
    The lemon rice recipe, with avarebele or skin-removed field bean, has only a few, common ingredients. Furthermore, the steps to make the lemon rice or chitranna are few and simple. Cook
    the avarebele, and make sure they are not overcooked.
    Cook the rice, again making sure it is not mushy but is fluffy. Spread the rice on a plate to let it cool.
    Prepare the tempering with avarebele and other ingredients like groundnut, chana dal, mustard, ginger, coconut gratings, and
    green chilies. Then, add the cooled rice, salt and lemon juice, and mix thoroughly, but gently.
    You can relish or serve lemon rice with avarebele without any side dish. Items like coconut chutney or baked potato chips, however, further elevates the taste of this rice cuisine a notch or two higher. Or, eat or serve this lemon rice with a topping of freshly grated coconut.
