Dublin Coddle a Traditional Irish Dish

  • Dublin Coddle is a traditional Irish dish that dates back to the 1700's, when what you had on hand was added to a pot to simmer. This is a rustic and hearty dish that is full of flavor and definitely a comfort food.

    Dublin Coddle
    Ingredients
    1 pound pork sausage (Irish pork bangers)
    1/2 pound bacon
    1 quart water
    2 quarts chicken broth
    2 pounds Yukon gold potatoes
    1 to 2 whole carrots
    1 to 2 yellow onion
    1/3 cup half and half or heavy cream
    1 Tbsp butter
    sprig of fresh thyme
    bunch of fresh parsley
    salt and pepper to taste
    Instructions
    Bring water and broth up to a simmer in a large Dutch oven, then add sausage and bacon. Cook for about 20 minutes. In the meantime peel and slice carrots, slice onion, and peel and slice potatoes. Remove meat from pot and reserve broth in a separate bowl. Begin layering meat, onion, carrots, and potatoes, seasoning with salt and pepper with every layer. Pour broth over until liquid almost covers everything. Lay thyme and parsley on top, cover and cook on medium low heat for 45 minutes. Remove thyme and parsley then add half and half and butter.

    One of our very favorite dishes! I can’t tell how satisfying it is. Irish comfort food! We make it several times a year.

    I was very fortunate to visit Ireland a few years ago!😘 It was such a wonderful trip! One Sunday we had a traditional Irish meal!
    One meal we had there they called it boiled bacon and to us it was just ham!😋
    Their traditional apple pie was different than what we're used to having but it was still very good!😚
    My family is Irish and we love corned beef for Saint Patrick's Day!🤤
    And of course we love Irish potatoes too!☺️
    This dish looks like a wonderful meal for Saint Patrick's Day!😁 Can't wait to try it!

      Oh I’m so glad you had the opportunity to visit Ireland! I was blessed to go several years ago and absolutely loved it! I’ve had the boiled bacon and love it! 😍
