Derek Cb ...who does? I haven’t looked around much except for EBay once in a while. I just started collecting folders a few years ago but Kitch knives are a whole different world.
Mick Keim I don’t know really. I’ve been into folders for less time than you. I was always strictly a user before, mostly for work but some camping. Been into cooking a long time though and been using a Shun since they came out. Would love more education about kitchen knives and wider selection though. Most knife nerds seem to be into folders primarily or exclusively for some reason. Would love to see more companies jump into kitchen knives with their take using high end steels and awesome heat treats. Depends on the market I guess though.
Derek Cb ...yes I agree...that would be wonderful. One thing I see them doing is building a kitch knife and marketing it as a camp chef knife, or a sort of hard use trail knife...all to sort of bridge the gap between folders and kitchen knives.
I couldn't agree with you more... and even more knives that serve as tactical kitchen knives... someone needs to break this barrier...
I think it would be cool to have chefs come in and test different knives you lay out for them.

Bradford Knives has a great culinary line in M390 and N690, and Spyderco just came out with their Murray Carter line in Super Blue steel. Both have super knife nut mojo. A few good choices in the video though

My favorite paring/small kitchen knife is a mora in carbon steel. Slowly developed a beautiful patina over the years. Great for meat processing and cleaning silver skin. Would love to see more make a large chef style kitchen knife
Hey guys, I have an idea for an episode. Kurt is blindfolded and he has to identify knives soley by feel. They’d have to be common, classic knives that most people would recognize. Flippers, folders, traditionals only--no automatics, OTF’s or fixed! Also, they should be closed, not open.
You guys should check out Extrema Ratio. They also do pretty bad ass kitchen knives. As well as steak knives and dining knives.

Honestly like a big knife for kitchen work especially when rocking the knife the worst is smashing your knuckles of the cutting board even when pinch gripped when I was a cook they were sharpened every other week and I hated when they got on the smaller size and a tip for curing onion’s is cut the ends off and run them under water for a minute helps cut the sting away

Y'all getting my money hard lately. The Micarta/Cruwear Spyderco Shaman I just ordered is great.
The Tops Dicer is my pick for coolest looking and one I want to buy. You couldn't even list a quarter of the kitchen knives available out there. There are more makers of kitchen knives than all the outdoor knife makers you have on your site. Most are probably no good, but as you showed you can get a good chefs knife for a little money that will last a long time.
Never looked at kitchen knives on BladeHQ usually go with the Instagram custom makers but dang that Chris Reeves and Fallkniven are beautiful.

So basically if you have a sharp knife, an onion won't make you cry. This is because instead of crushing/tearing the fibers of the onion which shoots the juice into the air, the proper slicing of a sharp knife cleanly separates the fibers.
We Knives Gyuto, Fallkniven Erna or the Chris Reeve Sikayo are def my favorites.
Hello guys, love this show. New West Knifeworks uses s35vn on all their kitchen knives and I dry mine after each use. It will get a bit of rust if you leave it in the sink to dry overnight.
Would love to see a ESEE kitchen option and a Benchmade as well... As a former professional chef, I would certainly have welcomed the 3V, M4, 20CV, LC200N materials into my knife bag!

Love kitchen knives. The first WE knife is not a santoku blade though. It's a Kiritsuke - for fish and vegetable slicing.
Loving that Chris reeves knife! May be able to talk my wife into getting one for her bakery. She has her fancy bread knife and chef knife I got her 8 years ago when we got married. I do have a bob Kramer/Shun utility kitchen that I bought for my wife and it’s amazing. That Japanese steel! Also bought a Shun chef knife for myself that is Damascus and my go to protein knife. Love to tip on the honing steel. Was actually looking at that one a month ago. Adding some stuff to my Christmas list. Keep up the good work guys! Ive been waiting for this one. Ive been a professional cook for about 15 years, long before i was a "knife" guy. I rock a Wusthof Grand Prix 2. Its 8" of X50CrMoV15 and its increadible. Usually runs about $130 or so. Best chef knife on the market
You hold a chefs knife with a pinch grip only. @30yrs in professional kitchens full or part time. Less potential to harm the user ( doesn't roll over easily when cutting thru firm/ hard items) ...and others usually.
My first set were Wûstof Grand Prix .... Wish I still had them. They are worth 3 times what I paid for them many moons ago.

I have a 10 inch Kershaw Damascus that I have been using for 5 to 10 years. It was expensive but I don't remember what I paid for it. A good knife is worth it if you use it.

I swear you all read my mind...I have been looking for an EDF fixed blade that can do kitchen prep (NOT bushcraft).( Full Flat grind, 7-8in overall, 3.25-4in cutting edge) I even attended Blade Show West looking for such a knife. Still on the hunt, any ideas? Thanks a million for doing this video BTW.
Do a blade hq brisket. On a smoker. Gear it to knife guys who are going to be more apt to bbq and smoking. Ibe been lookin at that kai luna set actually just wish they had a nice brisket carving knife (like a smooth version of the bread knife

What is the steel of the first knife? The Kiritsuke?.. because that seems a really cheap price if it were to be good quality say Blue or White #2. Or even VG10 or SG2 or hell even a stainless like 1K6 that would still be a great price. What’s the HRC?

I've used Wusthof for years but really like the looks of the Wi, the Erna, Sikayo and last but not least the TOPS Dicer. I do think you've neglected the kitchen knife segment of your audience and would love to see how Wusthof compares to Wi or TOPS. I need a side hustle for future purchases '-)

You should do an episode where you survey the staff / viewers for knife horror stories from lending your knife. This episode reminds me of the time I had a new girlfriend over for dinner. I used my amazing damascus shun knives, and afterwards she insisted on cleaning dishes to be fair. She cleaned my chefknife and then proceeded to dry it by repeatedly hitting the knife (blade side down) against my metal sink to whisk the water off before putting it in the drying rack.

First knife is a kiritsuke (k-tip) gyuto.
My dicer is coming tomorrow I’ll let you all know how it is I’ve been cooking since I was 6 and love blades so I’ll put it through the ringer

Todd Lake oh I love it haven’t had to sharpen the blade yet even after all Christmas cooking the micarta handle is great it is awesome for pinch grip. Just a wonderful knife. The finish on the blade isn’t my favorite for a kitchen knife it’s acid stone wash I believe so it’s fairly rough normally you want kitchen knives smooth to clean easier.
But overall I’d still give it a 10 as that doesn’t ruin functionality too much

If that Tops Chef "Dicer" had a 9 inch blade it would be perfect.
You should show someone making chili. Hear me out... Start with breaking down a quarter cow (or maybe just the primal) with butchering knives. Then switch to dicing veggies with a nakiri. Dice the beef with either a grinder if you have one or a good chef's knife. Maybe some tomatoes with the WE santoku. Go western to Japanese style and back a couple of times. And come on! It's Chili! So no beans.
