You can use gyroscopes to solve this problem. I use override on my actual mining ship to prevent any accidental rotation, but I guess turning is still a problem.
The irony here is immediately I see plenty of room for at least 6 or 8 refineries behind the ship, which can process the stone as fast as it is being mined at a moderate pace. Attach some ejectors just in case as well, and maybe a pair of jump drives behind the batteries so the amount of batteries can be more justified, and suddenly the ship isn't so bad I think...
I actually tried that, and did it. The refineries require more nuance than you’d expect, as they can easel get gummed up with junk, but the real issue is the power draw. I ended up having a few low-power refineries, a few faster ones when there’s excess power to burn, general purpose ore storage, and dedicated storage for stone and ice. Once the stone or ice became full I’d decouple the storage unit and leave it behind.

Every space engineers player has had the same thought at least once or twice during their playtime: "what if I built a mining ship so large that it could mine an entire asteroid in one go?"
I've made some pretty big ones and the problem I always ran into was this: It takes a ton of material and time to finally craft the miner. 1 mining run gets sooo many materials and I then have no project or ideas to use my infinite metals lol.

I built something with a similar aspect ratio called the Cerberus but I put the drills on the end. It was meant to be a mobile base with the ability to print copies of itself. A Von Neumann machine. With guns.

longer is always worse than wider, since you get wiggles you may end up digging at a curve and hit the tail of your ship

@FurryEskimo : lol. Sometimes it's worth a shot. I designed many ships just for a laugh myself, and then ended up designing something semi functional.
Add some gyros and set them to override so the whole ship spins, drilling a massive hole
Watch out for those invincible death voxels. Nothing kills more miners.
