Exceptional Chicken Stew Recipe

If you are looking to try a different chicken recipe, then this recipe is for you. It blew off my socks and I'm certain you will love it too. I made it for my husband and he loved it.
The recipe is from my cook book. Summer Food by Tjaart Walraven. I bought the book at CNA.
Ingredients:
15ml Olive oil
20g unsalted salt
4 drumsticks and 4 thighs (I used 4 chicken legs) You are welcome to use boneless chicken thighs or any pieces that you like
Sea salt and black pepper to taste
1 onion, diced
8 garlic cloves
75ml red wine vinegar (I used red wine vinegar reduction)
120ml dry white wine (1/2 cup)
1 ripe tomato, finely diced
40g pitted olives
30g capers
1 handful fresh parsley, roughly chopped.
Method Preheat the oven to 150 degrees Follow the method by watching the video.
