Thanks so much, Gail. Coriander roots are commonly used in Thai dishes and this ingredient is what that gives Thai dishes a unique taste. But we reckon that without coriander root, this chicken will turn out just fine as well. Happy cooking!

You should use red limestone water to make an extra crispy instead of water. Most of Thai street food vender and restaurants use red limestone water for fried food. You can buy it online in the States.

In the video you showed only one tsp of the pounded spice to mix with the water & sauces to season the drumstick, is that enough to season the drumstick ? Or do we use up all that we have pound ?
This recipe was perfecto although I didn't have coriander roots and replace it with celery roots instead. Im planning to use it as one of my staple menu. Thanks 👍
Errr no. Freezing after the first fry will introduce icicles into the batter n meat. it wld be better to freeze the marinated chicken n then proceed to thaw n follow the next steps altogether
