- Here is a recipe for a classic Italian Pasta/Spaghetti sauce...Bolognese. Bolognese uses ground meat (beef and pork in my case) and just a bit of tomato to create a rich, great tasting sauce for just about any pasta. Make a huge batch because it freezes really well, and you're going to be chowing down this perfect spaghetti sauce like there's no tomorrow.

I'm 11 years old now, watching cooking videos is very satisfying for me. Everyday I walk to the supermarket and steal me something to eat then sit at the library where there is free wifi. Made this today with beef burger, pork (we ground) veal (we ground) sweet Italian sausage took out of the casings , lots of our fave spices n seasonings had for dinner just finished it is phenomenal. Ty for this video keep them coming

I made something similar to this before but I used mushrooms thats how i like it. As a wise person once said you're the boss of your sauce you can do anything you want

Finally a good recipe. Nice job. Mine is similar. Secret to mine is a pinch of brown sugar, pinch of cinnamon and fresh thyme, and the rind of a Parmesan reggiano in the sauce while it cooks. I use whole milk or half and half. Great job.

Made this sauce twice now, I've tried a few recipes and this has to be the best, thank you.
Adding the milk/dairy threw the color off in a way I didn't like but then I saw the nice red color come back after the last stage of cooking. Looks awesome. Excellent video.

Worcester sauce is a good substitute in case like me you haven't got any wine. Adds a really good flavour

Macella Hazan, the Julia Child of Italian cooking, used nutmeg in her bolognese. This, like most "Italian Classics" vary a lot, even household to household. At the heart of it, it's a meat sauce.

I confirm Steve's point. I am checking a lot of Italian recipes videos, and all of them are really disappointing for an Italian. Some of them are simply absurd and most Italians would not even recognize them as edible food, let alone as "traditional italian dishes". But I am impressed by your video. Your recipe is almost perfect and I want to applaud you. Just, if I can give you a tip, try to avoid using cream, oregano and thyme, and any true Italian foodie will be proud of you. :)

been hopping videos to find the perfect bolognese recipe...i want a bolognese sauce with more tomatoes in and yours is perfect!!! most videos of bolognese did not add that much tomato or i'll end up in marinara sauce videos! so thanks a lot!

This is similar to the way I make my sauce. I learned from my dad who was from north Italy. He told me when you fry the ground beef, cook it with your garlic and onions at the same time, so the flavours get into the meat. I notice most people on youtube cook this separately. Good video though.
Im haveing cancer treatment ( radiation) and cant eat much of anything, so i love watching these vids so i can look forward to being able to eat good food...

WoW! this is an Excellent Recipe. Its simple and easy. I do have a question though...Can you add a little Chicken or Beef stock to this instead of water? I love the fact that you Used the Red Wine. Im saving this to my favorites. Compliments to the Chef!!!!!!

i'd suggest using chicken or beef stock in place of the wine or water. water is flavorless and you end up taking away from the sauce. as dave was stating, the alcohol is cooked off and the only thing left is the flavor of the wine. awesome bolognese dave! thanks!

So a basic spaghetti sauce with wine and milk looks very nice
Best Bolognese is here, no garlic involved.
1. heat pancetta in pan with oil until cooked
2. add diced carrot celery and onions until liquid evaporates
3. add beef cooked until brown and wait for meat juice to evaporate
4. add white wine to pan for deglazing and rid of stuck beef to bottom of pan
5. add 3 tablespoons of tomato puree and stir in
6. Add 250 ml or so of milk and allow meat to absorb it
7. Add some beef stock and allow sauce to simmer for 3 - 4 hours
8. Add more stock if dry.

Yes, the AOC, which regulates what you can call Champagne. My point was not that Rose is a grape. I know it is not. But that within the AOC, different grapes can be used, different styles of champagne created. Surely as a sommelier you wouldn't say that a Fleury Brut Rose is the same as a Billecart-Salmon Blanc de Blancs. Yet they are both champages. Made differently. under very strict AOC guidelines & equally official champagnes. That's analogous to my video, and the variation in any recipe.

I do alot of fusion cooking and when I make ragu like this I cook the ground meet in bacon fat that I mix curry powder into. Makes a super interesting flavor profile.

Sounds intriguing. I have used nutmeg, and in other dishes, cinnamon. Spices can put in a low note that is just right for matching other serving items.

Very true. Many people try different variations of any particular dish, but keeping original as possible is a safe bet. Mixing nut meg and bay leafs.... hmmmmm not sure plus you forgot Worcestershire sauce and some red wine.

This is the first sauce i found that looks like it's going to taste amazing. Mine is almost the same, and yes i love to use garlic as well. The only dish i don't use garlic for are pancakes hahahah. I never used carrot before, me and my hubby are debating on that( he loves it, i'm not a fan hahaha) But i will try it for sure. An advice: cook meat for a longer time (it need to "soffriggere") and add wine before (wait until alcoohol is evaporated, you have no smell of alcohol), then add tomato.
But i think the final result should be however good! Great!

You proved the point Emma makes. Yes, there is sparkling wine, which is different than Champagne. But w/n Champagne, there are hundreds types. Veuve Clicquot, Dom, & Cristal - all uniquely made. There are 3 grapes used; with different producers using them in different amounts. There's Rose there's Blanc de Blancs. There' brut, there's sec, there's Doux. To say there's 1 way to make champagne that everyone must follow, is as ignorant as saying there's 1 bolognese that everyone must follow.
