You will hear extended versions of these basic chords on the track... as is common in jazz of course :)
In theory, you can play C major scale over all the chords, except the A7 where you'd switch to D harmonic minor.
Scales:
C major - C D E F G A B
D harmonic minor - D E F G A Bb C#
Playing C major scale will result in C ionian (C chords), D dorian (Dm7 chords) and G mixolydian (G7 chords) - all the same 7 notes...
NOTE: It's only a two note difference between C major scale and D harmonic minor scale - as the C becomes a C# and the B becomes Bb - the rest of the 7 notes stay the same.... easy!!
You can also use C major pentatonic scale - C D E G A
(you could think good old A minor pentatonic as it's the same 5 notes!)
Next up, I'd recommend trying out some more advanced colours on the dominant chord (G7/G13) by using the
G diminished 1/2-1 tone scale = G Ab Bb B C# D E F
And you can also try out the A altered scale (superlocrian) on A7!
A superlocrian mode - A Bb C C# Eb F G
Arpeggios:
(C arpeggio = C E G)
Cmaj7 arpeggio = C E G B
A7 arpeggio = A C# E G
Dm7 arpeggio = D F A C
G7 arpeggio = G B D F

One of my favorite times to practice stuff like this is late at night when everyone is sleeping. I just close my eyes, let go of everything I know, and start from the beginning. This is a hell of a backing track, simple yet alive. I feel like I'm there in the room with the rhythm section, inspired to create something on the spot.
