Millet Pulao | Kodo Millet Pulao Recipe | How To Make Millet Pulao | Millet Recipes | Dr Khadar Vali
Ingredients
(for the sauteed veggies)
1 tbsp cold-pressed peanut oil
1 tsp jeera/cumin seeds
1 medium-sized sliced onion
1/2 cup cauliflower florets
1/2 cup green peas
1/2 cup sliced mushrooms
1/2 cup sliced carrots
1/2 cup chopped green beans
1/2 cup sliced bell pepper
1 tsp salt
1/2 tsp garam masala
1/4 cup water
1/2 cup chopped palak/spinach
(for cooking the kodo millet)
1 cup kodo millet/kodra, washed and soaked in water overnight or at least for 7-8 hours
3.5 cups of water to soak the kodo millet
1/2 tsp salt for the millets
1 tsp cold-pressed oil

Aap isme salt mat dalein. Baki masale dalkar bana lein phir apna hissa alag karke usme swaad anusar salt daal lein. Apne pati ke liye baki pulao mein aap swaad anusaar kabhi pav bhaji masala, kabhi fried rice masala, kabhi kitchen king masala, kabhi maggi masala dal kar banayein. Aap alag alag herbs, tej patta, long, elaichi, soya sauce, nimbu bhi dal sakti hain. Salt check karke zaroorat ho to dalein.

Hello sir. Hope you're doing good. Sir could you please tell me how should we eat ragi millet and jowar millet. I tried cooking them just like I cook banyard or koro but they weren't cooked 🙄😅😅. God bless you.
Ragi can be made into idli, dosa, roti, chilla etc while jowar can be made into roti, dosa, rice, pulao etc.

Sat Sri Akal A Sunshine, the white kodo millet is polished . Unpolished kodo is reddish brown. Always buy unpolished millet for complete health benefits. Thanks for watching and appreciating the recipe.

Hello, The soaking water should be discarded... fresh water to be used to cook the millets.
Phytate (phytic acid) Mainly found in seeds, grains and legumes reduces the absorption of minerals from a meal like iron, zinc, magnesium and calcium. Phytates are nutrient inhibitors.
Dr Khadar vali, known as Millet man of India, pioneered the revival of these traditional millets in India and has been working on them for the past 25 years. He insists that the soaking water should be used for cooking as during the long soaking time of at least 6-8 hours a lot of phytonutrients leach into this water.
