    Thanks Rob for the video. I will say I wish the vegan outreach site for this vegan challenge Lincoln had a comprehensive list of the vegan offerings as each restaurant deals with their menus and websites differently - some are stand alone website and some are Facebook pages. There’s one participant from South Dakota and I can’t even tell where or when their offering will be available 🤔
    I have other thoughts on the event which I’ve shared with you before on how existing vegan establishments are struggling and as local vegans we have to support those that support us and the animals.

      I'm going to comment on what I feel is the most important part of your comment, as a vegan just over 9 years now, I do feel it's important for me to support local 'all vegan' establishments first and only as much as possible. Between the three in Lincoln (Pepe's Bistro; Rutabagas Comfort Food; Naughty Buddha) our taste buds for many flavors things can be covered.
      I supported the Lincoln Vegan Challenge because it was only for a month and I wanted it to work to make vegan options more available in otherwise animal serving restaurants so non-vegans (pre-vegans) who say they eat animals because it's convenient can have another option or options which doesn't require the direct act of killing and exploitation of animals. The challenge also works too challenge people to step out of their comfort zone to eat a vegan food that can often carry the same taste and texture as other foods often associated with being made using animals and/or their secretion. Instead of grinding up animals to make them taste like food, the vegan method is grinding up plants to taste like food. A good burger does not have to be made from animals.
