If you decide to change burrs (or replace the paddle wheel) without disassembling the grinder base try this. After removing the wingnut use a clean 13/16-inch socket, short extension, ratchet handle and give it a clockwise tap to remove the burr .

from my assumption, M2 burr probably will produce less fines because it will cut the beans directly. For M3 burr it probably going to produce more fines because at the initial crushing that beans got squeezed on that flat surface to the wall.
Hello, I'm an espresso enthusiast … 2 weeks ago my wife gave me the new Gaggia Classic Pro and Baratza Encore for my birthday (she doesn't like coffee very much so she chose the Encore following reviews about good grinders on line). .. Sadly, I am having a hard time grinding as fine as for an espresso at the Baratza Encore. What will happen if I swap the M3 for an M2 and recalibrate the grinder to get the best grind (putting the screw in the rightmost hole)? Will I get a good fine grind for the espresso? I really want to buy the M2, but I need some assurance that I will not waste my time or money … Thank you very much! PS - I am really looking forward to buying both the M2 and the Portafilter Holder for the Encore on your website, only if it's worth it.
From what I've gathered, the M2 burr grinds a bit more uniformly. As far as using the Encore for espresso, I think that comes down to how large the steps are between settings. I have an Encore and haven't tried to grind for espresso yet.

The burrs DO NOT last "forever". I needed to replace my burr after 4 years of use. I grind through 2 or 3 lb of coffee a week on average ( lots of people live in my house and everybody drinks coffee ) according to baratza's own literature the burrs should last 10 years with 1 lb a week of use.

I only need pour overs. Will the consistency be worth it for upgrading to M2? Have you experienced a significantly less amount of fines with M2 on Encore?
Thanks for the information! We have a Maestro Plus. Would either burr work in it although it is fairly old and we’ve replaced a couple of parts over the years. Noticed the grind is a bit inconsistent at the few settings we grind. 500 lbs of beans. Maybe!

You didn't mention filter. would the m2 also be better for filter? Does it produce less fines?

What about upgrading my Baratza Encore to the level of the Baratza ESP ? Is the burr substitution basically the trick ?
No. They added a different gapping for the ESP grinds than the others. So the ESP can give you more precise espresso sizes

M2 all the way to the right will work for pressure portafilters and might work for others. It will go fine, but not super fine
