    To make vegan Vietnamese summer rolls, start by preparing your ingredients. You'll need rice paper wrappers, a variety of fresh vegetables such as julienned carrots, cucumbers, and bell peppers, you can also use fresh herbs like mint, basil, and cilantro. For protein, consider using tofu, tempeh, or even avocado slices. Slice your vegetables and tofu into thin, uniform pieces to ensure even distribution in each roll.
    Assembly is simple but requires a bit of practice. Dip a rice paper wrapper in water for a few seconds until it becomes pliable. Lay it flat on a clean surface and start layering your ingredients in the center of the wrapper. Begin with a putting Tofu in it , followed by the vegetables, herbs, and fruits. Fold the sides of the wrapper in and then roll it tightly from bottom to top, similar to rolling a burrito.     Rice Paper Rolls - 6-7
    Julienned Veggies -
    Three colored Peppers - 1/4 each
    Purple Cabbage - 50 GM
    Julienned Carrot and Cucumber - 1/2 each
    Alphonso Mango - 2 cut in think matchsticks.
    For Sauted Tofu -
    Tofu - 200 gm cut in matchsticks
    Cooking Oil - 2 tbsp
    For Marinate -
    Ginger Garlic finely Chopped - 1 tsp
    Soy Sauce - 1 tsp
    Vinegar - 1 tsp
    Tomato Ketchup - 1 tsp
    Agave Syrup - 1 tsp
    Salt - 1 pinch
    For Dipping Sauce -
    Smooth Peanut Butter - 1/4 Cup
    Ginger Garlic finely Chopped - 1 tsp
    Soy Sauce - 1 tsp
    Vinegar - 1 tsp
    Tomato Ketchup - 1 tsp
    Agave Syrup - 1 tsp
    Salt - 1 pinch
    Chili Flakes - 2 tsp
